Hey all!



I have a small store bought jar of pesto in my fridge, and wondered how long it will keep? Since I only use a bit at a time, this jar will last me forever. Just didn't know the fridge life of it. I'd freeze it, but since I only need a tablespoon at a time, I'd hate to go through the process of trying to get a bit at a time to use. Plus it's been in there for about 3 weeks now.

My pesto gets fuzzy (aka moldy) fast! I usually divide into recipe size servings (like I use a half cup for pizza) and freeze it in little ziploc bags. That way I don't waste it and I don't care that it costs me $8 for really good vegan pesto!

The label on the jar should tell you how long it keeps on a shelf as well as how long it should last once opened...

That's a good question.

I bought some thai lemongrass pesto at a farmer's market last week and there is no expiration date. I figured for mine if it smells funky, or looks funky, I will toss it.

Will this system potetially poison me?

i've noticed that many labels on stuff in canada and the states often don't tell you how long things keep once opened or refridgerated. its very annoying. in the uk its idiot proof- it'll say 'once opened, refridgerate and use within 4 days', for example. here it just says 'keep refridgerated' and you have to guess how long you've got before its gross and toxic. nevermind. i agree with others, if in doubt, freeze it pretty soon after you buy it. sorry i'm not much more help.

As long as the top is covered with oil, it should last several weeks. You'll know you didn't have enough oil because bits that peek out from the oil will develop white mould.

I guess that's why my homemade pesto lasted for MONTHS AND MONTHS. I must have used a ton of oil on it and while there wasn't a pond of it on top, my pesto never did develop mold.



But since I made too much of it (I had my basil plants go crazy 2 years ago), not all of it got used. After a really long time (I'm embarrassed to say how long), I finally threw it out... still sans any mold and still just as green as the day I made it.

My jar says 3 wks open in fridge.

I opened it about a week ago.

what's the problem? This is PESTO - I make huge batches (vegan) and eat it in one sitting - sometimes get out of bed in the middle of the night to polish it off- who eats tiny tablespoons???????



I dont ever have this problem, but the oil in the pesto freezes well.

^^ I can't imagine having extra pesto! I make vegan pesto (usually 1 1/2 cups at a time) and that *barely* feeds 3 people for one meal!

I made pesto on Friday night, and forgot about the other half sitting in my fridge until today.



Better throw it out.

i bet its mouldy by now....a year and a half on....



maybe the OP eventually froze it in icecube trays, then threw the little cubes into a ziplock bag, to get round the whole portion size freezing issue.
