Ground Beef to TVP conversion? - VeggieBoards

If I was using a recipe that called for 1 lbs of Ground Beef (raw), how much would that be in TVP granules (dry) and how much liquid would I need to rehydrate them?



I guess the question could also be answered as how many cups of browned ground beef does a pound of raw yield... and how much dry TVP rehydrated yields a cup?

Hmmm... I don't know the specifics. But I use a cup of dry TVP rehydrated with one cup of boiling water mixed with one packet of taco seasoning to make burritos. So I sub one cup dry for a pound of browned, drained ground beef.

'When I am substituting for meat in a recipe, I always figure that 1 lb of meat is equal to about 2 cups of reconstituted tvp granules or frozen tofu in volume.'



3/4 cup dry tvp plus 1/2 cup + 1 tablespoon liquid

= 1 cup reconstituted tvp

= 1/2 lb frozen tofu



1 1/2 cups dry tvp plus 1 1/4 cups liquid

= 2 cups reconstituted tvp

= 1 lb frozen tofu



2 1/4 cups dry tvp plus 1 7/8 cups liquid

= 3 cups reconstituted tvp

= 1 1/2 lbs frozen tofu

1 cup dry to 1 lb. ground beef sounds about right. Some packages actually have the substitution amounts listed...

I have never liked Bryanna Clark Grogan's liquid-to-TVP proportions or directions..... when I was first learning to use TVP I followed them and it always turned out "not quite rehydrated" and too chewy for my preference...



Just a thought anyway. I'd use at LEAST an equal amount of water as TVP...



And definitely use boiling water, it works so much better.

I think she calls for less because she uses the rehydrated tvp in saucy-type dishes like stews in which they continue to soak up liquid. This would prevent the tvp from becoming overly soggy.



Also, The TVP Cookbook by Dorothy Bates calls for reconstituting dry tvp using less liquid than tvp. This has always worked for me.
