I know that I have added vinegar to soy milk and to cow's milk to make sour milk (for baking), but can you do the same thing with rice milk?

Yes.



It's the vinegar reacting with the baking soda in the recipe that causes the leavening, so it really doesn't matter what kind of milk you use. To be honest, I've occasionally made 'sour water' because I didn't have any non-dairy milk on hand and it worked fine!

I tried it and it worked fine.

i think it depends. i think sour soymilk is often used to make the milk thicker so that the recipe isn't too thin/ liquidy.
