What's the difference between split peas and regular peas? Can I substitute split peas with regular peas?

Split peas come in yellow and green. They are dried and need to be soaked before cooking. They generally take about 45 minutes to an hour to cook and tend to dissolve into the broth. Split peas are a legume. Fresh peas are a vegetable and cook very quickly. I don't think substituting one for the other would be successful.

Actually .... they don't need to be soaked, but I always soak mine because they usually seem to stay kind of crunchy if I don't!

Snow peas are the best peas ever.



Regular peas, I'll only eat fresh or frozen. The canned ones are icky.

I do love fresh peas, in the pod, right off the vine. But then and only then. Otherwise, it's split peas all the way.
