I'd been browsing recipes for vegan butter for some time, and finally took the challenge. I will never buy margarine again!
this is a mix from the various recipes I've seen:
3/4 cup refined coconut oil (tasteless) melt in microwave until liquid.
2 teaspoon liquid lecithin (I struggled with gel caps- have ordered liquid!)
3/4 cup light oil- I used grapeseed
1/2 cup store bought non dairy milk I used soy creamer
mix 1 teaspoon apple cider vinegar in milk/creamer
1/2 teaspoon salt
Combine everything in food processor and whir on high for 3-4 minutes. Pour in container and chill
this came out like whipped butter and held that consistency. The first one I tried more exact from a recipe was hard and had more coconut oil.
I love the slight sweetness from the soy creamer with the slight tart from vinegar.
AND, I got the refined coconut at Walmart 14oz for under $4. I may have to go back there just to stock up on that.
