I really need some suggestions for lunch. Am going through the same things every two weeks and am getting tired of it. So what's some of y'all favorite things to pack for lunch. Am up for anything please no tofu recipes for some reason I can't cook it to were I like it. Thanks
I like to make cold salads such as the following and portion them into five containers for my lunches for during the week:
Cooked wild rice with raw chopped onion, celery, chopped walnuts (or other nut or seed), dried or fresh cranberries, chopped apple, and maple syrup/dijon dressing.
Cooked quinoa with chopped onion, raisins, shredded carrot, slices of orange, chopped kale, and fresh juice squeezed from an orange on it.
Sauteed sweet potato, black beans, kale, dried unsweetened coconut flakes, and curry powder, garlic powder, and coconut milk.
Sometimes I do sandwiches like pita bread with hummus, sprouts, and red pepper slices in it and have sliced jicama and grapes on the side. Or homemade energy bars (I like this formula: http://www.nomeatathlete.com/homemade-energy-bar-recipe/), plant milk, and a garden salad. I like sandwiches with sliced tempeh, saurkraut, and sauteed softened savoy cabbage and mustard in there.
Most often I make a huge batch of bean/vegetable soup and store it in the refrigerator. Each morning before heading off to work I heat a portion up and add it to a thermos and off I go. I might make a homemade bread or muffin to go with it, or a salad or bring some plant milk and dates.
Burritos. You can stuff a tortilla with anything. Today I had seasoned sauteed yams, corn, refried beans, Daiya cheddar shreds, avocado and tomato.
They reheat in the microwave very quickly.
