Quick way to 'soak' cashews? - VeggieBoards

I have a recipe that calls for soaking cashews overnight. I actually planned on making this dish for dinner tonight. Oops!

 

Is there a quick way to get the effect of soaking cashews? Can I boil them?

Yup you can boil them. Put them in a pot of water, bring it to a boil and then turn off the heat and let them sit for an hour. I think the overnight method is supposed to be better but this works in a pinch. smiley.gif
