I recently moved in with my boyfriend and both of us are
iffy about drinking tap water, ergo we buy gallon after gallon
of water. We're looking into water purifiers but have yet to
make any real head way. To cut back on water expenses I've
been trying to eat a lot more melon and cucumber. Basically
any foods that are high in water content. I've been eating raw
cucumbers for the past week before going to work. I'd like to
mix it up and have scoured the internet for veggie friendly cucumber
recipes for breakfast to no avail! If you have any suggestions
I would love to hear them and would find them very useful. I realize
that cucumber is kind of an odd breakfast choice. Also, I don't
eat breads or wraps or carbs really other than in vegetables so this
makes it a bit of a challenge.

Tzatziki is a popular recipe that you can make vegan. It is made of grated cucumber and yogurt. You can serve it with tofu cakes if you don't eat bread. See the below link.

You could also make melon smoothies.

I don't know where you live and don't know why you're not drinking tap water. You can also buy Brita carafe's to filter it if need be.

Where I live the tap water is just awful. Safe, they say, but even after double brita filtering, it is salty and chlorine tasting. Plus flouride added.

Isn't there anything you can do about this ? It is just not right that people should have to drink bad tasting water !

I'm lucky as overhere the water tastes perfect and is far cheaper than bottled stuff.

Lol, they say they try, but the ground water is so close to the surface and so mineral-filled or some BS, I don't know. It is safe but vile. The interesting thing is I live near Zephyrhills where the spring is for that brand of bottled water. But that still tastes brackish to me, Idk.

You could try carbonating it, making herbal tea in large quantites and refregirate it. You can also buy fruit flavoured sugar free sticks to add to it.

I love cucumber just by itself. It is an unusual breakfast choice, but there's nothing wrong with it- although cucumber wouldn't be very filling and I suppose you'd get hungry by mid-morning.

One of Anna Thomas' Vegetarian Epicure books has a recipe for cucumbers which she describes as trying to become dill pickles and not quite making it... but I don't know that half-dill-pickles would suit you for breakfast...

Let me know if you want me to post the recipe.

I grew up with not safe for consumption well water. I can relate to how much it sucks not being able to drink water right from the faucet. Most of the grocery stores around here have a spot in the store where you can refill your empty bottles. It's a lot cheaper than constantly buying new bottles.

As for the breakfast cuke recipes. Maybe a smoothie with cucumbers?

I was going to say something about the near grocery store thing, I think most is like a quarter or fifty cents a gallon. And cucumber smoothie might be good.
