Some day I'm going to try making red velvet cake, I think. But I should ask: what does it taste like?

So I know if I'm on the right track.

It's a form of chocolate cake so it tastes like moist, chocolate cake dyed red.
Edit: & is usually paired with cream cheese frosting. I'd be excited to see a vegan recipe for this!

It is usually very rich and moist, and it does have a chocolate flavor. It is not red velvet cake if it does not have cream cheese (or cheeze) frosting, as far as I'm concerned! (Also, carrot cake needs cream cheese frosting)

I wouldn't use POM brand if using pomegranate juice - put this in the "WHA?" file - POM **funded** animal studies in a bid to get FDA approval for health claims on the product!

More and more it feels like Southern diner/truck stop cookin' is "my" cuisine even though I am a life-long yankee. I hadn't even heard of red velvet cake until a few months ago.

I loooooove red velvet cake. It definitely has a chocolatey taste, but there's something different about it that I'm not sure I can describe. I agree that cream cheese frosting is mandatory.

Does it actually *need* to be red? I've never had it before but i'm guessing it has copious amounts of colouring in it?

No I didn't put the colouring in as I think it looks really artificial, still tastes just as good

I was idly thinking about themed menus (the ways I amuse myself sometimes ) and I was brainstorming David Lynch dinner ideas. How fun would it be to dye a cake with blueberry juice or use blue cornmeal (I like that one) and dub it 'Blue Velvet' cake!

Or, but I'm not sure how to color it, but an Elvis dinner with 'Black Velvet' cake. Damn, now I gotta figure out how to do that ...

OOH OOH Just had an idea ... like black bean brownies except less dense somehow ...

I get a bunch of hits googling black velvet cake ... Guess I'm not as clever as I thought ... OOH OOH black licorice should be involved somehow I think ....

Red Velvet is delicious. It is my favorite. And yes, it must be red, but you don't have to use food coloring. Originally, the buttermilk and viniger would react, and turn the cocoa powder red. With modern dutch processed cocoa, it is less pronounced, and comes out a dusty redish color. People add food coloring to make it bright.

As for taste, its very moist, and not super sweet. Which is why I like it. It's rich without being 'omg this is sickly sweet'.

And yes, cream cheese (or cheeze) frosting is a must. Pecans pressed into the frosting is optional, but you must eat it this way at least once.

Is really chocolaty? I don't like chocolate chocolate cake but if it's just a little chocolaty I'd be willing to try it.
I watched Bobby Flay throwdown Red velvet cake I think he (or was it the person he was up against) said he used something to naturally make it red but I forget what it was

Sometimes people use beats or beat baby food for coloring. It is not very chocolatey. I don't know how to describe it. Like, you can tell there is chocolate in there, but it's not 'omg chocolate cake'. Does that make sense?

I have a friend who makes red velvet cake balls. She makes a red velvet cake, crumbles it up, mixes it with a little soya whipped cream to make it stick together, rolls it into balls approx 1.1/2" in diameter, chills them, and then dips them in chocolate and leaves them to set...

okay, who's mouth is watering now?!

to me it has no flavor.....its kinda bland but has a slight hint of chocolate but no dominant flavor....to me its just pretty
