What to do with left over Kalamata olive "juice"? - VeggieBoards

I have a couple of jars of left-over Kalamata olive "juice" (the marinade- we've eaten the olives themselves!). Any ideas for what I can use it in? Thanks!!

I might add it to minestrone soup to give the soup a little more punch.

First though is martinis, and the second is chickpea salad sandwhiches. The soup idea is good too.

hummus with olives sounds good too

what would i be able to eat it with? i dont eat crackes much and there is nothing else that it can be nice with

Soup or salad dressing! I also add it to the cooking tomatoes when I'm making homemade spaghetti sauce in the summer... adding to commercial spaghetti sauce would be too salty I think...

Another vote for salad dressing. I'll use up olive "juice" by pouring it over my salads.

Hummus can be nice with lots of things, depending on your tastes. People eat it with raw veggies, like carrots, celery, peppers, etc, as a spread on sandwiches, with pita, with chips, on pizza, thinned out to make a salad dressing, or just by the spoonful.

Thanks, guys! I will definitely try out the soup, salad and pasta sauce ideas, all sound yummy!

Kibble, my first idea was martinis too, believe me, I've tried! But I found the kalamata flavor to be a little too overwhelming for that; I think I'll stick with the green olives juice.

We do use it in hummus too and it's great for that. But I think we just eat olives much faster than we make and eat hummus so I've ended up with 3 extra jars.

Mmmm...olives, really the only fruit I eat, and that's cause it's brined!
