My blog is very simple, like me.

http://nomeatin2014.blogspot.ca/

Every year I like to set myself a challenge; these have ranged from cycling to work everyday for a year to writing a book.

For 2014 I decided to challenge myself to go veggie for a year.  I myself have always been a meat eater and I had no inclination to give up meat, hence it was a challenge.

The blog is simply a record of a new meal I make each week and a rating with the aim of finding the best veggie dish out there.

On a personal note, I am loving being a vegetarian......I'm not sure this is the 'challenge' I was expecting!

Cheers

Rich

Hi Rich, that's great.

Vegetarianism usually ends up being a lot easier than people imagine :)

I hope you'll be inspired to stick with it after the year (or at least inspire you to eat a lot more vegetarian in the future).

You seem like quite the chef, some great pictures on your blog!

I really love your idea of rating every recipe - I guess it can be of a great help to meat-eaters going vegan :)

Hiya Rich

If you are looking for a roast substitute, you might want to give this a try.  I know you said in your blog that you're not keen on mushrooms so you might want to alter the stuffing.  I do think, however, they add to the meaty flavouring.

Here's a similiar nut roast that worked perfectly for me! Seasoned well, moist, and good texture:

Scroll down to cashew nut roast with cranberries. I do love them with mushrooms though!
