Naturebound's GF Vegan Carrot Breakfast Muffins

makes more or less than 10 muffins depending on how much batter you put in each tin

 

Ingredients:

·        1 cup quinoa flour (can use ground up whole quinoa if you have a high speed blender or mill)

·        1 cup certified gluten free oat flour (can use ground up gf oats)

·        ¼ cup flax meal (or ground up flax seeds)

·        1 T GF baking powder (or make your own using 2 parts Cream of Tartar

 1 part baking soda  1 part cornstarch)

·        1 tsp. baking soda

·        Pinch salt

·        Cinnamon

·        Allspice

·        Cardamom or ginger

·        1 cup plant milk

·        1 cup warm water

·        ¼ cup maple syrup, agave, or other liquid sweetener

·        ½ cup pumpkin (canned or fresh pureed) or unsweetened apple sauce

·        2/3 cup grated carrot (can also use zucchini)

 

Preheat oven to 375

 

Spray muffin tins with cooking spray or use paper muffin cups

 

Mix/sift dry ingredients in large bowl

 

Mix wet ingredients in separate bowl

 

Combine wet mixture into dry mixture and stir just until blended

 

Spoon mixture into muffin tins, filling each ¾ full

 

Bake for 30 minutes
