This cold soup is the perfect with a hot summer day.

2 Tomatoes
3 soaked slices of bread
1/4 onion
1 small green sweet pepper or 1/5 of a green bell pepper
about 1/3 cup of plain unsweetened soymilk
1 tsp of salt
1 tsp of cumin
A splash of red wine vinegar
1/4 cup of olive oil
1 minced garlic clove

season to taste

Ok so cut up the tomatoes and put that in the blender, take bread and squeeze the water out as best you can and put that in the blender. Add all other ingredients. Blend until there's no chunks left and its a smooth soup. Chill and enjoy.

I've got a traditional Andalucian gazpacho récipe you might want to try because...........I'm going to try yours

5 large ripe tomatoes (the redder the better)
2 green peppers
1 médium sized cucumber
2 cloves of garlic
about a third of a stale baguette
wine vinegar (apart from the tomatoes and olive oil it is one of the principal ingredients)
extra virgin olive oil

1 Soak the bread in cold wáter

2 Cut the tomatoes, 1 pepper, half cucumber, garlic and add to the bread (squeeze it out a bit). I give this a good mashing using a pestle and mortar.

3 Add salt, approximately half a cup of olive oil and 2 tablespoons of vinegar

4 Using a hand blender mix until smooth and creamy

5 Sieve if you want and add more wáter if required (I don't bother sieving)

6 Cut the leftover pepper and cucumber into small dice and garnish once served

7 Best served really cold
