Saturday - Halloween - What's for dinner?


Me: Pasta with tomatoes and red peppers, salad with olive oil and balsamic vinegar with a glass of red wine ( got to love Saturdays!)

Yesterday was veggie casserole with spinach and a satsuma (or two, I can't remember).

No idea about tonight yet but thinknig about trying a mung bean curry (been craving mung beans for ages for some reason!)

Tonight was 'fend for yourself' night in mi casa. I made a tasty tostada bowl using refried beans, taco mock meat, mushrooms, onions, cheese, tomatoes, corn, salsa & sour cream.



Buon apetit! Or however it is in spanish...

Had myself some raw avocado/carrot/kale soup and a parsley hummus sandwich, everything homemade including the bread.

going to bake some turnips, carrots, potatoes and quinoa or lentils together in the oven with some herbs and see how it comes out. Trying to use up some of our root veggies.

Yet more mung bean curry (recipe was for 4 and there's only me eating it, oh dear), probably with pitta bread today and some sort of fruit after.



Either that or I might eat the curry tomorrow and make something else today as curry is getting a bit repetitive- I might try Almeria's idea and just bake some veggies and quinoa together!

It's a major pet hate of mine when people spell it with 1 'i' =P

I never had my root veggie bake yesterday cause i wound up at the ER needing stitches. So i had a crappy taco time burrito without sour cream or cheese, but it was nasty. making the root veggie bake tonight but with trader joes harvest grain blend instead of quinoa cause i can't find the box in the pantry and don't feel like digging around with my messed up pinky.
