What kind of icing/glaze is on your cupcakes, Tori? Or is it just a dusting of powdered sugar? Either way, they look fab!
I just made the lychee cupcakes, and they're GOOD! The coconut glaze goes so well with them! They remind me of my favourite lychee bubble tea LOL. I think I'd like the coconut glaze on ordinary chocolate cupcakes as well.

Oh, good idea for the pumpkin chocolate chip ones. Those sound really good and something different to take to the in-laws this Thanksgiving.
I have yet to make one recipe from the book that I did not like.
This is not cupcake related, but did you know there's a new(at least I think it's new) book by the same authors called something like Vegan Cookies are Invading Your Cookie Jar?
I've asked Santa for a copy. If it's anything like the cupcake book, it'll be fabulous!

Lol, I couldn't wait until Christmas so I ordered it today. I figured I wanted it before so I could bake all the yummy goodness.
