    Tweety... yeah, I think the Okinawan younger generation are already showing some health problems their parents didn't have based on their different dietary practices. The change can certainly be traced in China and Japan as cities, then towns adopt more wealthy/Western eating habits and the overall health declines.

    Sorry you got the wrong answer on the McD board. He's got support boards on his own site now, so more of the people seem to be more familiar with what he's said. I've assumed that you were talking about when it was on VS and called the weight loss discussion board. :-)

    Yep it was the VS message board and it was a good long while ago. I should know better than to believe what I read on a message board.

    Tofu probably has a high percentage of total calories as fat, but is generally such a lower calorie food, I don't worry about the fat grams which aren't really that high in my opinion.

    Metabolic Panel of results after 4 months as vegan.

    I am a diabetic male, 41 years of age, who is controlling diabetes with a vegan diet and daily walks. My goal is too reverse my diabetes. Here are my lab results:

    Total Cholesterol:134
    Triglycerides: 134
    HDL: 32
    LDL: 75
    A1c: 6.5%
    Sodium: 140
    Potassium: 4.5
    Calcium: 9.6
    Glucose: 115
    Any thoughts? Do some levels seem too low or too high?

    Oh boy I got my tests back today.
    My iron is at 8 - that's right 8! Not 20 - 160(ref range). No wonder I'm so tired. I need to get it up to around 40 to start feeling fit and healthy apparently. My coeliac affects my absorption so its iron suppplement for life for me! I already take a daily vitamin tablet but obviously its not enough. B12 is really good after having a deficiency last year. Interestingly though the increase as been since I switched to soy milk (fortified with b12) from cow's milk.

    when i was in the chemist the other day i noticed that they now sell iron tabs that contain vit c as well which helps absorption of the iron. could be an option for you
