    Wickedly Good Black-Russian Cake

    Wickedly Good Black-Russian Cake

    This recipe is suitable for a: vegetarian or vegan diet

    Category: Desserts - Cakes




    Ingredients:
    -----------------------------------------------------

    1/2 cup vegetable oil
    1 pkg chocolate cake mix (several brands are vegan, just read the label)
    1 pkg instant chocolate pudding mix (again, several brands are vegan, just read the label. If you prefer, the "Mori-Nu" Pudding Mates are a tofu based pudding mix)
    Egg replacer equiv. to 4 eggs, OR 1/2 cup well-blended silken tofu.
    3/4 cup STRONG coffee
    1/4 cup coffee liqueur
    2 tbsp vodka




    Instructions:
    -----------------------------------------------------

    Mix devil's food cake mix with instant chocolate pudding mix.

    Beat egg-replacer or tofu and add to the mixture. Add liquid ingredients (coffee, liqueur and vodka). Mix well. Pour into a greased and floured bundt pan.

    Bake in 350F oven for 45-50 minutes. Cool cake and remove from pan.

    This is SOOOO easy!!

    My sister and I invented our own easy version of the decadent cake we used to get at a restaurant while we were in college...

    Since many cake and pudding mixes are suprisingly vegan, it was easy to "veganize" our recipe.
    It's JUST as good as the original.

    I guess I should add a disclaimer and say this cake is for those old enough to drink... heh....

    That sounds really tasty! I wish it didn't use box mixes though... Hmmmm...

    I'll have to try it sometime. I wonder what egg replacer would work best?

    mikie - I am not a big fan of "boxed mixes" either, but this is something my sis and I made - and LOVED - as starving (and cooking-challanged) college students when boxed mixes were a way of life...

    I figured it was quick and easy and simple, others might have as much fun with it as we did...
    God's original plan was to hang out in a garden with some naked vegetarians.
