    Vegan Lemon Loaf Cake

    Lemon Loaf Cake

    This recipe is suitable for a: vegetarian/vegan diet.

    Ingredients:

    1 3/4 cups flour
    1 teaspoon baking powder
    1/2 teaspoon salt
    2 large lemons
    1/2 cup melted margarine
    1 cup brown sugar
    En-Er-G vegan egg substitute equiv. to two eggs
    2/3 cup soy milk
    1/2 teaspoon vanilla
    1/4 cup powdered sugar or more


    Instructions:

    Mix dry ingredients (except sugars).
    Finely grate lemon peel from 1 entire lemon and stir it in.
    Juice both lemons. Set aside.
    Beat margarine and brown sugar with electri mixer until fluffy - add egg replacer and beat another minute.
    Add flour mixture and milk to margarine mixture.
    Add vanilla and 1 Tb. lemon juice. Mix with electric mixer again for 30 - 45 seconds.
    Pour into greased loaf pan (large bread-loaf size) and bake for 1 hour at 350 or until toothpick comes out virtually clean.
    Let cool for at least 20 minutes.

    Make glaze: Mix remaining lemon juice with as much powdered sugar as is needed until a thick liquid forms. This is your "glaze".
    Invert Loaf cake onto a serving plate and drizzle with glaze. Let cool completely before serving.

    Additional comments:

    This isn't a traditional "round" birthday cake, but gets used as a birthday cake often around our house because we all love Lemon!!

    Yum! I made this into muffins/cupcakes and added poppyseeds! They were really good, but were kind of undercooked in the middle. I've been experimenting with lemon poppyseed muffins lately and this has happened with every recipe I've tried. I've heard that adding too much lemon juice to the batter can mess with the baking somehow (I added extra in these because I LOVE lemon). I'm going to keep trying to make a fluffy lemon poppyseed muffin! I bet this recipe will taste good like a cake, so I will definitely make it as a cake sometime.

    If it's a bit undercooked because of the amount of lemon juice you can add a bit more egg replacer... and/or add the grated peel from both lemons, to "boost" the lemon flavor... also decrease the sugar a bit will make it more "sour" if thats what you're wanting...
