    “Ice Cream” Cake

    Recipe submitted by lauratiara

    I made the cake for my bf, and it was a hit.

    “Ice Cream” Cake
    Makes one cake or 8-10 servings

    3 cups flour (I used 2 cups whole wheat, one white)
    2 cups sugar
    1/2 cup cocoa powder
    2 tsp. baking soda
    2 tsp. vanilla extract
    2 tsp. distilled white vinegar
    1/2 cup plus 2 Tbsp. vegetable oil
    2 cups cold water
    2 pints nondairy ice cream
    15 oreo style cookies (I use newman o's mint, or mint oreos or uh oh oreos are good too)
    16 oz. nondairy whipping cream (hip whip) or container of Pillbury's whipped cream cheese frosting (be sure the one you buy is vegan)
    Preheat the oven to 350ºF. Grease and flour two 9-inch round or square cake pans and set aside.
    In a medium bowl, combine the flour, sugar, cocoa powder, and baking soda. Stir in the vanilla, vinegar, and oil. Add the water and stir well. Immediately pour the mixture into the two cake pans, dividing evenly, and bake at 350ºF for 30 to 35 minutes.
    Allow the cakes to cool before removing them from the pans, then divide each cake into two layers.
    Put the bottom layer of one cake on a serving platter. Spread one pint of the nondairy ice cream over the top and sprinkle it with the ground cookies. Top it with the top piece of the cake, placed upside down so that the flat side faces up.
    Spread that cake with the remaining ice cream and cookies and top it with the final piece of cake so that the rounded side is face up. Ice the entire cake with the nondairy whipped cream or frosting. Spring with some ground cookies. It looks like a giant oreo.
    Keep in freezer for several hours to firm up.

    If you make this cake, you will eat it everyday for a whole week. It is huge and delicious, and the cake will make you open the freezer and eat a piece when you get home from work.

    Ooooh...I was just looking for some "ice cream" type dessert to take to work next week.

    Jen-yeah, it was his birthday cake.
    I enjoy cooking and baking, I am vegan Emerill. BAM.
    He is vegan too, and he loved it. (it is mandatory to be vegan if you want to get it on with me) haha, I am being silly.

    I was thinking like, jen really doesn't like when women cook for their bf or something.
    Like my cake making for a man was setting the women's movement back.

    Man, that sounds soo crazy good!! ooooh with mint or green tea rice "ice cream" in it! aaww man im really going to have to make it for myself for my bday
