    Orange Spice Cake

    This recipe is suitable for a: vegetarian/vegan diet.

    Ingredients:

    2 Tablespoons flax seeds
    6 Tablespoons water
    Zest and juice of 1 orange
    1/3 cup soy or rice milk, or as needed
    2 cups flour (unbleached white or whole wheat pastry flour)
    3 Tablespoons rum (or 1 Tablespoon vanilla if you don't want to use rum)
    1/2 teaspoon salt
    1/2 teaspoon baking soda
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/4 teaspoon allspice
    1/4 teaspoon ground cloves
    1/2 cup chopped dried fruit (apples, dates, apricots, raisins, blueberries, or cranberries)
    1/3 cup oil
    1/2 to 3/4 cup vegan granulated sweetener


    Instructions:

    Preheat oven to 350 degrees. Lightly oil a 9 x 5-inch loaf pan. Grind the flax seeds in a spice or coffe mill to a medium-fine meal, or the consistency of wheat or oat bran. Place the ground seeds in a blender and mix with the water until seeds are thick and foamy. Set aside. In a liquid measuring cup combine orange juice and enough soy or rice milk to make 3/4 cup. Set aside for the milk to curdle. (This will give a buttermilk-like flavor to the bread.) In a large mixing bowl combine orange zest, flour, salt, baking powder, baking soda, cinnamon, nutmeg, allspice, and cloves. Mix well, making sure there are no small lumps. Mix in the dried fruit. In another smaller bowl, cream the oil and sweetener together until smooth and creamy. With a spoon, blend the flax seed egg-replacer with the oil and sweetener mixture until smooth and creamy, then beat in the orange-soy milk mixture. Make a well in the center of the dry ingredients. Pour the liquid ingredients into the well and mix in a with a spoon. Mix until a thick dough forms. Scrape the dough in to the prepared loaf pan and bake for 50 minutes or until a toothpick comes out clean when inserted in the middle of the loaf. Remove from the oven and let sit for 5 to 10 minutes before removing from baking pan. Cool on a rack. Serve warm or cold.

    OH MY! I just took a batch out of the oven. I made muffins 9 muffins instead of a cake or loaf. I didn't realise how much the dough would rise. This would make 12 normal sized muffins, and that is what I will do next time.
    I made a few substitutions based on what I had on hand:
    I didn't have an actual orange, so I used 1/2 cup of OJ and 1/2 cup of soy milk.
    I used orange flavoured craisins for the dried fruit, so that likely made up for the lack of orange zest.
    I forgot the rum/vanilla extract by accident
    I used unsweetened applesauce instead of oil.
    Yum yum yum yum yum. I will add the vanilla next time though, even though the recipe is fine without it.

    This is one recipe I will have to try. Orange and spice. Yum! I'd like to put prunes in it. Call me strange, I love prunes. They just have a bad reputation.

    I like prunes too. But I see that this recipe says it's suitable for a vegetarian diet... it looks to me like this recipe is fully vegan. Am I missing an ingredient?

    Every snowflake in an avalanche pleads "Not Guilty".

    Tom, I'm glad someone else likes prunes too.

    I did a cut and paste of the recipe from the link at the top of the page to run a copy off. It's seems to be all vegan to me also.

    This was such a great cake, I couldn’t get enough but ran out of pretty much all the necessities in making it again. I’ll have to run to the store again soon.
    I also gave some to my daughters, they loved it as well, this is a A++ recipe. Thank you for sharing.

    I changed it to say suitable for a vegan diet. Not sure why it didn't say that initially.
