    Heavenly Vegan Cheesecake

    Heavenly Vegan Cheesecake

    This recipe is suitable for a: vegetarian/vegan diet.

    Ingredients:

    Crust:
    2 c. granola of choice
    4 Tbsp. Earth Balance margarine
    2 Tbsp. light brown sugar
    1 tsp. ground cinnamon

    Filling:
    8 oz. Tofutti Sour Supreme
    16 oz. Tofutti cream cheese
    1 c. light brown sugar
    2 Tbsp. whole wheat flour
    2 Tbsp. lemon juice
    2 tsp. vanilla extract
    1 tsp.salt


    Instructions:

    Preaheat oven to 325 degrees. Grind granola in a blender to the consistency of coarse flour. Transfer granola to a mixing bowl and add cinnamon and sugar, make sure to mix the ingredients well. Melt margarine and add to the granola mixture and mix well. Press mixture into a 9" springform pan or deep dish pie pan.
    With an electric mixer, blend all the filling ingredients until smooth. Pour into crust and bake for 25 minutes until just golden brown. Let cool and chill for 3 hours before serving.

    This is actually an altered recipe from a vegan cook book called Native Foods. I L-O-V-E cheesecake....I'm a snob about cheesecake, and this cheesecake tastes just as good as it's dairy counterpart. Serve it with fresh berries for an extra special treat.

    I have that cookbook. And yes, this cheesecake is fantabulous. Have you ever been to their restaurant? I actually had this for the first time at one of their restaurants in Westwood, California. I had the Philly Peppersteak Sandwich and the Chili Cheese Fries for lunch and the cheesecake for dessert. Their food is awesome. I ate there about a year before the cookbook came out. All that time I kept wishing they would come out with a cookbook so that I could have that cheesecake recipe.

    Just a note on the baking though. I found that I had to bake the cheesecake for a little longer than the recipe called for, like 35-40 min. instead of 20-25. Otherwise, the filling came out too mushy, and it remained a bit mushy even after chilling. I also added an extra tablespoon of flour for added density. (unbleached white instead of whole wheat)

    Smart Balance

    Just a note that Smart Balance margarine is vegetarian friendly, but not vegan because it contains whey.

    IIRC, Smart Balance Light is vegan. The regular is not.

    Oh guys...I'm sorry, I meant EARTH Balance, not smart balance. I always get them confused. I went ahead and edited my OP.
