    Don't Tell the Kids it's Tofu Cheesecake

    This recipe is suitable for a: vegetarian diet.

    Ingredients:

    CRUST:
    2 pounds Graham cracker crumbs*
    4 ounces Maple syrup
    1/2 ounce Orange extract

    Note: be sure to choose vegan graham crackers that do not contain honey to make the crumbs.

    FILLING:
    2 pounds Silken tofu
    3 ounces Orange juice concentrate, thawed
    2 ounces Apple butter
    1/2 ounce Orange zest
    1 ounce Cornstarch (dissolved in 3 ounces of soy or rice milk)


    Instructions:
    -----------------------------------------------------

    Preheat oven to 350 degrees. In a mixing bowl combine crumbs, syrup, and orange extract until crumbs are moistened. Divide between two 9-inch layer pans, and press firmly into pans. Bake 5 minutes and allow to cool.

    In blender, combine remaining ingredients until smooth. Pour into crust and bake for 30 minutes or until top is slightly browned. Cool and refrigerate until firm and set, about 2 hours.


    Additional comments:
    -----------------------------------------------------

    VARIATION: If desired, press crust into individual muffin tins to create "personal" cheesecakes.

    VARIATION: Top with seasonal fruit for added color.

    Yield: 2 pies (10 slices each).

    I'm new at this....

    When I saw the title of this, I replaced "Kids" with "Husband". He he.

    Just a couple of questions:
    Can I use regular graham cracker crumbs? I have some in the cupboard that a friend gave me last year before she moved and I've not used them yet. We also have a box of graham crackers that can be used as well. (I don't want to buy anything if I already have it.)

    Isn't orange zest generally optional? I was just reading another recipe on here (I don't remember what) and the poster said she omitted the orang zest and used OJ instead.

    Can regular cow's milk (the un-organic stuff from the grocery store; It's all my budget allows for now, especially when I can go through a gallon by myself in just a couple of days) be used in lieu of soy or rice?

    Thanks. Im looking for the "healthy" stuff to use on my husband and his family (all big processed food eaters; I almost can't believe I used to be that way. Unlike them, though, I'm easily adaptable to the real good stuff.
