    Carrot Cake

    This recipe is suitable for a: vegetarian/vegan diet.

    Ingredients:

    For the cake:

    1/4 cup cinnamon applesauce (or equivalent substitute for 2 eggs)
    1 tsp. vanilla extract
    1/2 cup soy margarine, softened
    1 tsp. salt
    1 1/2 tsp. baking powder
    2 tsp. cinnamon
    1 cup sugar
    1 1/4 cups unbleached all-purpose flour
    1/4 cup vanilla soy milk
    1 cup carrots, finely grated (or a large jar of strained-carrot baby food)
    1 cup walnuts, chopped

    For the frosting:

    8 oz. Tofutti Better Than Cream Cheese
    1/2 cup soy margarine
    2 cups powdered sugar
    1 tsp. vanilla extract
    1 1/2 tsp. orange extract


    Instructions:
    -----------------------------------------------------

    Preheat the oven to 325°F and grease and flour a 9-inch square pan. Combine the first 9 cake ingredients, mix them well, and stir in the carrots and walnuts. Pour the batter into the pan and spread evenly. Bake for about 45 minutes, take out, and let cool.

    For the icing, combine the cream cheese and margarine and, when mixed, slowly add the powdered sugar, followed by the vanilla and orange extracts.

    tofutti alternatives

    anyone know of any alternatives to tofutti cream cheese? it tastes kinda good, but that stuff is like 90% hydrogenated oils! yuck!

    While visiting the grocery store, I came across the Tofutti cream cheese for the first time. I was excited, but then completely shocked to realize that it consisted of hydrogenated oils. Companies like that one, have to realize that Vegetarians generally live a very healthy lifestyle.

    Horsecrap. I hate this push that various groups are making against tofutti to remove hydrogenated oils from their products. #1. Vegetarianism isn't about Being Healthy for everyone - a lot of people are doing it out of a simple, genuine concern for the animals. #2. Tofutti isn't even marketed for vegetarian or health conscious individuals - it was designed for people who are lactose intolerant.

    I agree about how everyone isn't health-conscious. But, wouldn't it be better though to not have hydrogenated oils in it? I mean, I eat it anyway, but I would feel better about it if it didn't have PHOs. Expeller-pressed oils are a fine substitute. I know everyone isn't health-conscious, but for the benefit of everyone, PHOs should be erradicated. There are alternatives.

    They do make a non-hydrogenated version and I think it's really good. Check your local health food store.

    Yup, just checked their website and they make a non-hydrogenated version.

    This sounds like a winner, I’m going to have to get the stuff for this recipe in the morning when I get out of work and try this one out myself. Thank you for sharing this. I’m a big fan of deserts as you may notice throughout this thread.
    I figure I should take advantage of my metabolism being so quick while I have the chance, you know what I mean? =D

    I'm going to make this into cupcakes.

    And Tofutti non-hydrogenated cream cheese is AWESOME for the icing. It's the only kind I buy.
