    Vegan Chocolate Cake w/ Peanut Butter Frosting

    Vegan Chocolate Cake w/ Peanut Butter Frosting by Elizabeth Grimshaw

    This recipe is suitable for a: vegetarian/vegan diet.


    Ingredients:
    -----------------------------------------------------
    Cake:

    1½ cups flour
    1/3 cup cocoa powder
    ½ tsp baking soda
    ½ tsp salt
    1 cup sugar
    ½ cup vegetable oil
    1 cup cold water/coffee
    2 tsp vanilla
    2 tbs vinegar

    Frosting:

    2 ounces unsweetened chocolate
    ¼ cup smooth peanut butter
    3 tbs water
    1 tsp vanilla
    1 cup confectioners sugar


    Instructions:
    -----------------------------------------------------
    For Cake:

    Heat oven to 350. Mix together all ingredients but vinegar. Mix in vinegar, immediatly put into oven. Cook ~35 minutes.

    For Frosting:

    Melt chocolate, either in double broiler/heavy saucepan or microwave. Stir. Mix together remaining ingredients.


    Additional comments:
    -----------------------------------------------------
    Smooth peanut butter looks better. I used a round cake pan, and waited until the cake and frosting were both cool to frost.

    I posted this origionaly... It looks weird cause half the ingredients are for the cake, half for the frosting...

    2 ounces unsweetened chocolate
    ¼ cup smooth peanut butter
    3 tbs water
    1 tsp vanilla
    1 cup confectioners sugar

    Those are the frosting ingredients.

    I love this cake, I make mine with 1/4 cup applesauce and 1/4 cup oil instead of all oil.
    You can also make it with Splenda and sugar (1/2 cup each).

    Thanks for this recipe! I made this on the weekend for my friend's party where we all had to bring something vegan. It was so easy to make! I made them into cupcakes instead of a full cake - I also sprinkled dessicated coconut and little chocolate sprinkles on top of the icing.
    They were sooooo nice! Such a good recipe - thanks again

    Quick question water/coffee thats either or correct?
    Also quick note I heated up the PB and drizzled it across cake pretty easy to do and add some flare.

    I made this cake today, very yummy and gooey. I didn't have unsweetened chocolate, but the frosting is still very good. Also I only had red wine vinegar, and that worked just as fine (and took the suggestion of using substituting applesauce). Thanks!
