    Dairy-free bread?

I'm a newly-turned vegan living in an area which does not have many vegetarians/vegans. For the most part, I've found things simple enough to locate in a supermarket, with one exception. Bread.

EVERY whole grain bread I've found has dairy in it, without exception. It was so frustrating searching for it and having to eventually give up! I finally decided that I'd just make homemade bread for sandwich use.

Making homemade bread has been delicious, but the problem is, the kinds I've made are much more suited for dipping in soup than sandwich-making. The crust is just too crunchy to really work.

Do you guys know any simple vegan bread recipes with few ingredients that'll end up with a fairly soft crust? Is it just a matter of cooking for a longer time at a lower temperature, or do the ingredients themselves make a difference? Or maybe I can find some vegan bread at the supermarket, but I'm just not looking in the right place?

    Thanks a million.

yeah, try experimenting with temperature. Using more yeast will put more gas into the mix so the dough may not be as heavy and hence take less time to cook. Muck around with those ideas and see how you go.

No recipes here, but I use Arnold's soft 100% whole wheat bread. They have it at my target. I found out about its veganness here on VB:

It's Arnold 100% Natural Soft 100% Whole Wheat
Don't confuse it with their normal 100% Whole Wheat bread which is NOT vegan.

    The ingredients are as follows:
whole wheat flour, water, sugar, wheat gluten, yeast, soybean oil, salt, cultured wheat starch, soy flour, calcium sulfate, soy lecithin, monocalcium phosphate

I called about the sugar and was asked to give them my contact information (name, phone number, and e-mail address) and they said that they could have someone contact me about it. I just got a call about 10 minutes ago to tell me that they use a cane sugar but it's not filtered through bone char. They also let me know this is the only bread they sell that is completely vegan, most of their others contain mono/di glycerides from animal origins or some kind of milk product.

Did anyone contacted the producer to check if the sugar and calcium were vegan?

If you cook it in a tin at a lower temperature, then you will be able to cook the loaf through before the crust gets so crispy. You could try to fiddle about with the water content and the white flour content. I don't think you would ever be able to get that kind of crust softness without the manipulation that industrial bakers are capable of. They use all sorts of tricks to make bread softer.

I reckon that using baking flour to replace some of the strong flour can produce a softer bread, but I haven't tried that enough to say for sure.

The quote I put in my reply stated that the person phoned them and was told the sugar was cane and not filtered with bone char and this was the company's only completely vegan bread. They didn't specifically mention the calcium though.

I recently contacted Arnold's as well and the rep told me they used no animal ingredients other than what was specifically listed such as whey. She assured me the other ingredients that can sometimes be vegan or not, were NOT animal products. However, a LOT of their breads have honey and whey so read ingredients carefully.

Ezekiel 4:9 by Food for Life is by far the best bread you can find in the market. Organic, flourless, no additives or preservatives. You cannot get anything healthier than this. Their other breads are also good. And the best part is that all their products are VEGAN!!!!!!!!!!!!!!!!!

YES. It's great for sandwiches also...especially if lightly toasted.

Look around for the best price though. I find that Trader Joe's around here has the best price for it but at some places it can be very pricey.
