    that's good of them. In the past I didn't bother worrying too much about calcium, but it's being supplemented into everything these days. Nice to know for sure when a source is vegan.

    Have you tried steaming your bread? It comes out super soft and fluffy, like Wonder bread. You can use a bamboo steamer. Another method I use is too put a metal pan with at least 1" sides in the oven, on the bottom rack under the bread, and leave it in there while the bread cooks. 5 minutes before the bread is done, pour about 2 cups of water in the pan and close the door gently. Be CAREFUL! You will get a huge cloud of steam, so don't burn your face or hands This should set the crust, but keep it from being too crunchy like a baguette or parisian. Oh man, now I wanna go bake bread at 2 a.m.

    Wow, thanks so much, everyone! I never expected I'd get so much help, seriously.

    I'll look out for the brands mentioned, and try cooking at a lower temperature. :]

    That steaming idea is awesome! Sadly, I don't have a bamboo steamer, but I'll try your second idea. And nudge the parents about getting that steamer, lol. xD

    When I take a loaf of bread out of the oven, I rub the crust lightly with either olive oil or vegan margarine, then cover the whole thing with a wet dish towel (you can use a wet paper towel). This steams the crust nicely and softens it.
