    Trouble preparing food for myself

Some background: I'm in college and living off campus with some omni roomies. I don't eat much because it's a hassle for me to prepare food. Specifically, vegetables, legumes, and whole grains. I am an extremely picky eater because I don't like the sauces and dressings that others seem to enjoy: I believe food tastes better without spices, herbs, salt, etc. I do add salt to my food occasionally, but only for the iodine. Otherwise, my food is better without it.

My daily menu goes like this:
Breakfast: Oatmeal (cooked from one cup of dry rolled oats)
Lunch: I eat lunch only on occasion, and it's only when I have leftovers from dinner. I generally have a light snack instead, which consists of breakfast cereal right out of the bag, the occasional fruit, and usually some nuts.
Dinner: Usually, it's just rice (3/4 cup dry, cooked) or pasta (enough) with fruit. I add vegetables sometimes if I feel like it and have some on hand. Washing the vegetables and cleaning up afterward just seems like too much of a hassle most of the time.

The situation: The kitchen's sort of dirty and I'm a little too lazy to clean up when I prepare food. I have a rice cooker and a slow cooker; I generally use the rice cooker to make dinner. I prefer slow cooked food because the veggies seem to develop a stronger aroma, though they always end up overcooked, but I can't find a way to work it into my schedule.

I want to eat healthily and include vegetables, whole grains, and legumes into my diet. Suggestions? Help? Thanks!

Clean the kitchen. Ask them to help keep it clean, and if they don't your moving a "Mini Kitchen" Into your room, and they're not allowed to use it.

I hate messy kitchens, they drive me nuts.

I did one massive cleaning some time ago, but it's dirty again. Too lazy to do it again.

    A "mini kitchen"? I'm interested.

I'd still like tips for minimal prep healthy meals, of course.

I'm confused why you don't eat more fruits and vegetables? You can eat spinach or other greens right out of a bag/container and fruit just needs peeled or washed and/or chopped.

Yep, a little Mini-fridge, and a small table that you can put a microwave, or toaster oven on. I'm convinced you can cook anything in a toaster oven. Make sure you have a little room left to prep or mix stuff together. Small enough to make stuff in minimal space. I had a little table with a cupboard that I put dishes in, too.

I also find that just tossing fruits and veggies in a bowl works for quick and yummeh meals.

I feel your pain. I share a kitchen with a total skank. I just wash up things as I need them and have a massive clean up now and again.

It gives me so many stomach upsets though, it's probably quite dangerous. One time he left a RAW chicken carcass out for days, and would have left it longer, when confronted about it he said "oh it's only been a few days, it's fine".

Brilliant! ...but how would I prep the veggies? (Edit: I buy fresh. The stuff has to be washed and cut.)

You could buy pre-prepped veggies at the supermarket. They have pre-cut all sorts of things, washed and ready go, fresh.

I could, but those are expensive. Frozen might work, but I'm not sure how much those cost... I've seen people saying they cost more and others say they cost less. They're also wrapped in plastic, which isn't very environmentally friendly.
