    No-Recipe Recipes

We have Food Porn, we have a recipe section... but doesn't anybody just throw something together super fast and easily? I'm talking like there's one or two (or the word "vegetables" maybe) main ingredients and then the rest are pantry staples for the most part.

Maybe you throw some canned whatever in a pot and make a soup
Or you throw some vegetable on some mashed potatoes and bake it

What are some of those embarassingly easy dishes you make for yourself, maybe when it's just you and there's no one to impress?

    Tomato Soup and Noodles:
Pour the desired amount of soup over the desired amount of noodles and enjoy. It's good with smaller noodles like wagon wheels, shells, or spirals.

    Tomato Sandwich:
Place sliced tomato on bread. If desired, smear on some Veg/mayo-- if you do that though, I'd recommend blotting off some of the tomato's excess juice. If making without the veg/mayo, you might want to keep as much juice as possible. Sprinkle with course salt and pepper. Good with any kind of bread though Sourdough is my favorite!

Ohh yes I've done that before.

1 tub coconut curry-- I forget the brand.
1 can (or more or less) chickpeas
make some coconut rice with water and coconut milk. Pour on sauce and chickpeas. Maybe even sprinkle some chopped coconut over it.

    Something similar here:

Saute an onion and some garlic, add a can of tomatos, a good dollop of curry paste (Pataks or Sharwoods - Madras is nice) and can of chick peas(drained) and some frozen veg. Simmer and pour over rice. Quick and easy veg curry.

two bags of instant brown rice, one package of sliced cherry tomatoes, one can of chick peas rinsed and drained and one package of tomato basil feta cheese. I was so enamored with this creation that I plan to make it again next week for my dinners. It tasted almost gourmet

Only in a Spin World do we accept the label "health nut." If you go vegan, eat organic, exercise and avoid junk food, your are a nut. Smoke two packs a day, sit on your couch watching tv and live on McDonalds . . . and you run no risk of being called a "disease nut." (Mickey Z)

There is one dish I put together out of desperation one day. I had nothing really to eat but I had a decent handful of ingredients. Potatoes, sweet corn, broccoli, tempeh, olive oil, Italian seasonings, organic pizza sauce, spinach pasta, black beans...

So I cut the 8 ounce block of tempeh into cubes. I put them in a nine inch pie pan (and they didn't over lap at all...they fit perfectly) and poured some olive oil in there and sprinkled them with Italian seasoning. I cubed up two small red potatoes and put them on top of the cubed tempeh and sprinkled the potatoes with rosemary. Then I took a package of Whole Foods frozen sweet corn and dumped some out into the pan until it created another layer and on top of that I put an array of frozen Whole Foods organic broccoli florets. I sprinkled some Italian seasonings on top and drizzled a bit more olive oil on top, covered it all up with aluminum foil and popped it into the oven that I had preheated at 425º.

I allowed this to bake for 30 minutes. During the last fifteen minutes or so I boiled a third of a box of spinach pasta. Once that was done I drained that. I added a can of drained black beans to the pot along with about a third to half a jar of Neuman's Own Sockarooni pasta sauce and put the pasta back in there and heated it back up on low.

After a half an hour or so (and if you go over a bit on the half an hour you can always adjust the heat on the oven to warm and leave it in there for a bit longer...I've done that quite a few times) I take the pie pan out. On a plate or in a bowl I put a few scoops of the pasta/bean/sauce mix and then I add a few scoops of the roasted tempeh and veggies. Dollop a couple of spoon fulls of organic pizza sauce on top and enjoy.

And you know, it's REALLY good. I am telling you the oven roasted tempeh is the BOMB. It gets golden brown and just a tad crispy on the bottom and it soaks up the seasoning and the olive oil. I tried it once with tofu, and NO THANKS! It has to be tempeh. It adds the right texture to the whole things.

I created it with a few left over ingredients in the kitchen and it was super simple to make, and you could use any three veggies you wanted in the mix or add more or whatever...it's totally whatever you want to make it!

I can get four servings out of this that fill me up. Now I make this at least once a week or so.

I always take the leftover toppings from pizza night and throw them in a pan. Add some tomato paste and oregano, then toss with pasta. Easy work night meal.

Scrambled tofu with barbecue sauce on a roll with veganaise and banana peppers.
Add a little jarred spaghetti sauce to a can of vegetarian vegetable soup;tastes like minestrone.
Tomato soup with a couple of handfuls of frozen corn thrown in; heat through and serve with tortilla chips.
Black eyed peas poured over cooked rice and topped with chopped green onion and bell pepper with a little salsa on the side.
