    Eggplant, panko, veganaise, spices
    Mix veganaise with a lot of onion powder and garlic powder-- the taste should be strong. Slather it on eggplant slices and dredge in panko (bread crumbs might not be as good, but I'd try it.) Bake at 400F, flip until both sides are crisp

    I like to put some taco seasoning on the some black beans and cook them for a bit. You can put them in a salad, a taco, burrito, quesodias with some refried beans, salsa, sourcream. It taste just like meat!

    This 'pizzaish' sandwhich is what I make maybe a bit too often.
    Slice a ciabatta in half, spread marg on both bits. On one side sprinkle herbs and pepper. On the other spread garlic and tomato puree with a bit of salt.
    Then either just some spinach (after grilling) or mock meat onto the tomatoey half. Sometimes I put organic cheddar/vegan mozzarella on the tomatoey half, sometimes I leave it off. Grill both bits, add some vegan garlic mayo to the 'buttery' half. Squish together. NOM NOM NOM

    This is my food in the grip of laziness/desperation: Good veg stock cubes (e.g Kallo) in water for cooking rice. EAT THE RICE. So good, so stupidly simple.
