    Pumpkin Satay Sauce

    Pumpkin Satay Sauce

    This recipe is suitable for a: vegetarian/vegan diet


    Preparation Time: 30 minutes
    Serves: 2


    Ingredients:
    -----------------------------------------------------

    2.5 Cups cubed pumpkin
    1 cup raw cashews
    1 clove fine chopped garlic
    tbsp olive oil
    1/2 tsp cumin
    1/4 tsp tumeric
    cup of water
    large pinch of salt
    tsp chilli flakes
    splash or so of tabasco
    2 tbsp chopped corriander/cilantro
    handful of cashews, chopped


    Instructions:
    -----------------------------------------------------

    Cover the cashews and soak for minimum half an hour. Steam or roast pumpkin. In pot heat oil and fry off garlic, cumin, tumeric for a minute then add cooked pumpkin, cashews, chilli, tabasco and water.

    With hand/stick blender, blend till smooth. Heat and add corriander/cilantro just before serving.

    I just poured this sauce over steamed veggies and served it with rice. But you could serve it over tempeh or tofu, chick peas whatever you feel like.

    I don't have a stick blender- I'd have to cool off the pumpkin a bit, blend it with the cashews and water, and add it to the sauteed stuff. But I suppose that would work...
    Every snowflake in an avalanche pleads "Not Guilty".
