FitTV also has a lot of informative cooking shows. Get Fresh With Sara Snow frequently features vegetarian/vegan recipes. A Lyon in the Kitchen and Just Cook This are two other shows that focus on easy, healthy recipes that are sometimes vegetarian or can be made vegetarian.
I don't like how meat centric they all are, and how many chefs are anti-vegetarian.
I'm a Food Network addict. I love good eats and unwrapped, and yes I watch omni cooking shows, I mentaly make them veggie. I love love Emril, Barefoot Contessa, the Neelys, and Giada haha I watch it too much.

I'm a food network junky. I like to fantasize that I'm going to get my own food network show. On my show I will take all the other food network stars recipes and show how to veg*nize them. I have too much free time.
I used to watch a lot of the shows. Now I occasionally watch the cake shows or Iron Chef if there's nothing else on. I'll watch the first few minutes of Iron Chef, and if it's "battle carcass," I turn it off. "Battle coconut" was one of the coolest things I've seen in a while though. Most of the dishes were easily veganized, and they did some crazy cool things with those coconuts! I got some good ideas! They made fruit sushi with Thai-style (though they didn't admit the Thai inspiration) coconut sticky rice as the rice part, as well as coconut ice cream paired with a fruit sorbet. Score for two totally yummy vegan dishes!
I don't like the contest shows. Too much cutting back and forth between contestants and it's impossible for me to learn anything. They are more about artificial drama than they are about food.
I like the creativity on Ace of Cakes, but it kind of creeps me out how much they rub their hands all over the cakes.
My fav show is America's Test Kitchen because they take the time to explain what they think is best, how they are preparing it and why they are doing what they do.
