I've started sprouting again for fresh greens during the winter. But I've run out of things to do with them. For lunch, I've got a pita full of them with veggie deli slices, and a salad topped with them. What other options are there?

If you are sprouting beans, there are lots of dishes like stir fries and pad thai that incorporate them.

Yeah, I second the stir fries. They are also good thrown into most broth based soups.
Lots of Asian recipes use sprouts, so I'd look in that direction. If you are talking like alfalfa sprouts, those aren't good for cooked meals, really. For those I would say sandwiches, salads and smoothies. If you are tired of your current salad routine, look for new combinations and dressings to jazz things up.

sammies, salads and I sprinkle some in Veggie Tacos....I have sprinkled some in noodle dishes....

I've never had success with mung beans. The best try was with a colander lined with cheesecloth (after a nights soak) kept wet. They just don't fatten up like the store bought kind. Actually the Asian grocery has them so cheap and big I don't bother.
Do you sprout mung beans? Any recommendations?
I just made this:
sauteed 1/2 a chopped onion, one red pepper and 1 shredded carrot.
added 1/2 cup quinoa and 1 cup veg broth
1 cup mung bean sprouts and 1 cup defrosted green peas
let simmer 15-20 min.
A weekend breakfast:
sautee mung beansprouts, onion, pepper
add crumbled tofu (with crushed fakin' bit things if you like)

Salads and sandwiches. I really can eat a platefull covered with a favorite dressing and call it lunch, so I'm not the one to ask for an original idea...
God's original plan was to hang out in a garden with some naked vegetarians.
