    Thinking about becoming vegetarian - need some help

    Hi, I am thinking about becoming vegetarian. Both of my parents are from India have been vegetarian all their lives. I have never been vegetarian though, as I've always eaten poultry and seafood. I find it easy to eat vegetarian if I'm eating Indian cuisine because the majority of it is vegetarian to begin with, but I don't only want to be limited to Indian cuisine and other foods made of only cheeses and vegetables, because I do enjoy the taste of poultry and seafood. So what are some good vegetarian alternatives to poultry and seafood? The ones I've picked up so far at the grocery store are not that great. Do any of you guys have any suggestions on any poultry and seafood alternatives that somewhat tastes like the real thing, or any recipes to make meat alternatives that almost taste like the real thing? Thanks in advance.

    I don't know any good alternatives to chicken or seafood, as I never liked them when I ate meat. But I really love Gardenburger and Morningstar veggieburgers (though I am willing to bet that you didn't eat beef.) I've made some Indian food using tofu before; it's worked all right.

    Why are you interested in being a vegetarian?

    Seitan is a great chicken substitute

    seitan is a great chicken substitute. It can be prepared just like chicken. The texture of seitan is very similar to chicken. No soft and mushy like tofu. Also, texturized vegetable protein is often used in mock chicken and tuna salads. Hang in there...once you stop eating chicken and tuna you will no longer crave it.

    I haven't tried them but an omni friend was just raving to me about LiteLife "chicken strips". I figure for a meat eater to like them they must be pretty chicken like.

    Mock fish





    recipe: Fish With Bean Paste

    Ingredients
    Veg "Fu Gui" Fish
    (1)
    Ginger (chopped) 1 tablespoon
    Red Chili (chopped) 1 tablespoon
    Water Chestnut (chopped) ½ tablespoon
    Celery (chopped) ½ tablespoon
    (2)
    Spicy Bean Paste 1 tablespoon
    Veg Oyster Sauce 1 tablespoon
    Sugar 1 tablespoon
    Salt, MSG 1/4 teaspoon each
    Black Vinegar ½ teaspoon
    Water 1 cup
    (3)
    Corn Starch ½ tablespoon
    Water 1 tablespoon
    Method
    1
    Score "Fu Gui" Fish inside length wise and cross wise. Deep-fry it till turns gold, drag out and put in plate

    Deep-fry ingredients (1)
    Then add in ingredients (2), stir it.
    Put in prepared "Fu Gui" Fish and cook for 3 mins. Drag out the "Fu Gui" Fish , put on serving plate.

    Make paste with ingredients (3) , pour it on "Fu Gui" Fish as topping, put some chopped celery and serve.

    Soy chicken


    recipe: Curry Chicken


    Ingredients
    Veg Little Chicken Nuggets 600g
    Potato 2 kg
    (1)
    Cinnamon 1 piece
    Star Anise 3 pieces
    Curry Powder (make paste) 3 tablespoons
    Lemon Grass (serai) 3 stalks
    (2)
    Salt 3 teaspoon
    Sugar 2 teaspoon
    MSG (optional) 1 teaspoon
    Water 3 big bowls
    (3)
    Sambal Chili Sauce 3 tablespoon
    Coconut Milk 2
    Method
    1
    Peel potatoes, cut them in big pieces and deep-fry till half cooked. Set aside. Crushed up lemon grass.

    Deep-fry chicken nugget for a while.

    Heat 4 tablespoon oil in wok, gently fry ingredients (1) until fragrant.
    Then add ingredients (2) .
    Bring to boil and add potatoes and chicken nugget together with ingredients (3)
    and boil over medium heat till potatoes are throughly cooked. Serve hot.

    Whoa! I [I]might[I] be able to get down the chicken recipe, but there is no way that I could consume that fish thing. If it tastes like it looks, it should be a suitable substitute!
