Went out to an Asian Buffet, to my surprise actually had TONS of veg options.

Since it was a buffet, I had delicious diced potatoes, lo mein noodles, mei fun noodles, hot & sour soup with tofu, rice, egg rolls, and ice cream!

....and talk about Oink-O-Rama!! *(Oink-O-Rama is a word Crazy Ms.Sadler [an old teacher of mine] used to describe overly delicious food.)*

Guacamole and pico de gallo tacos. Chips with homemade salsa.

Finished it off with a raw vegan cheesecake.

Most was homemade, I even did the taco shells myself. I cheated and got the cheesecake from Whole Foods though.

Perhaps one day I will have a dinner that doesn't involve avocados... okay nevermind, I'm lying.

Fishless-fingers with my spicy eggless tartar sauce, mushy peas and oven chips sprinkled with creole seasoning. fat-tastic!

Download hundreds of vegan recipes in free eBooks I've compiled.

Did a root veggie type bake again tonight. Threw together a leek, sweet potato, regular potato, carrot, parsnip, lentils and brown rice with herbs and some vegan butter. We'll see how it comes out!

Not my dinner, but I just ate a bowl of oatmeal with pomegranite, dates, and a few unsalted sunflower seeds. So freakin' yummy!
