I am looking for a healthy Vegan cheese in the UK. Does anyone know of any? I saw that in the US they have a great one called vegan gourmet cheese. The ingredients look great on it. Any help would be appreciated as I really want to go Vegan. Thanks!

I get vegan cheese from the health food shop Holland and Barrett in the UK. I also get it from this shop in Liverpool called Mattas. Its made by redwood foods see http://www.redwoodfoods.co.uk/.

Its not too bad. I make nice vegan pizzas with it!

The redwood stuff is very good its called Cheezly. Its my fave in a toasted sandwich. (Many Tescos sell the basic Cheddar version)

Cheese toasties with bacon bits.

They do cheedar style, one with bits in, a garlic one, and a really delicious nacho cheese (I love this as a nibble)

All vegan... and they also do a vegan Feta

Another good brand is by Biddy Mekins... cheddar styles, italian herbs etc...also melts well on toast (slighly less granular texture than Cheezly).

Toffutti do small square slices in regfridgerators in some health food shops... but I have never tried these.

(Some brands of 'cheese alternative' cheese actually have casein in them - a milk protein. SO keep an eye on the ingredients)

Thank you so much for all that! It really is helpful to me as I'm new at stuff like this. I'm really excited about being vegan though. I will go out and buy all the stuff you mentioned and thanks for telling me about casein.

Tofu, would you be interested in making your own vegan cheese? I have a simple, healthy, and tasty recipe that's a hit with both veg*ns and omnis. Let me know! :)

Sure! Here you go...

BASIC SHARP CHEDDARY SPREAD (VEGAN)

250gms silken tofu
3 level tbsp nutritional yeast flakes
2 T natural peanut butter (can use tahini instead)
1½ T light miso
¾ t salt
¾ LEVEL teaspoon paprika
1 t prepared yellow mustard
1 t onion powder
1 t garlic powder
4 T salsa (I like Master Foods medium salsa)

Place all the ingredients in a food processor and process until very smooth. Chill thoroughly (CHILLING IT IS IMPORTANT. It tastes even better the next day.).

This can be used in any recipe calling for cheddar/nacho cheese. I've used it in lasagnas, biscuits, "cheese" toast, etc. with good success. It replaces melted dairy cheese beautifully.

Enjoy!

Question though: what is miso?

Miso is a thick, nutritious paste that tastes like soy sauce. I think it should be available at most Asian grocery stores. Please do make sure you use the mellow variety (should be creamy yellow or light brown) in this recipe.
