Panettone-like loaf

This recipe is suitable for a: vegetarian/vegan diet
Preparation Time: 60? minutes
Serves: 6?
Ingredients:

DRY;
300 grams all-pupose flour
110 grams sugar [OR 70gr sugar + 2 tbsp maple syrup]
2 packages backing powder [The ones that say "1 package for 500gr flour"]
1 tsp cinnamon
1 - 1 1/2 tbsp Lebkuchen spices
WET;
Amaretto Di Saronno [almond liquor]
120gr raisins
1 handfull candied fruits of your choice [or as much as desired]
1/2 cup or so of water
Instructions:

1. Preheat your oven to 180°C/350°F and put parchment paper into
a round, high cake mould, folding the sides to make it look
like a giant cupcake liner.
2. Put the raisins in a small bowl, pour the liquor over them and microwave them until the liquor starts frothing. Set aside.
3. When the raisins are soft, add the candied fruits, mix well and let stand
for about five minutes.
4. Combine the dry ingredients in a large bowl.
5. Incorporate the fruit mix making sure to combine it evenly with the rest.
Now add just enough water to make a soft, sticky dough.
It should not stick all-too much to the bowl anymore but be too
sticky to mix it with your hands.
Keep working the dough for a couple of minutes with a spoon.
6. Scrape the dough with the spoon all at once out of
the bowl and into the prepared mould.
If it's pourable you added too much water,
while if it plops into the mould almost by itself, it wasn't enough
7. Pop your loaf into the oven and bake for 40-50 minutes
or until an inserted toothpick comes out clean.
Additional comments:

Do not use your hands to mix the dough; half of it might just stick to them!
Check the bottom after baking: It should be soft, but pop back when
you press it in with your fingers. The top should be somewhat firm, and
slightly crisp, though.
Serve still warm with a cup of hot rice milk.
This is not like real Panettone, but
I came up with this recipe while trying
to make one.
