Ginger Biscuits

This recipe is suitable for a: vegetarian/vegan diet
Preparation Time: 20 minutes
Serves: 20
Ingredients:

125g Soft Margarine
125g Sugar- preferably brown or Demetra
15mls Golden Syrup
30mls water
180g Self raising flour
1 teaspoon ground ginger
Instructions:

1. Preheat the oven to 180°C/350°F Gas mark 4.
2. Put out some baking trays and sprinkle them with some flour.
3. Put the margarine and sugar in a mixing bowl, cream them until they have the consistency of whipped cream.
4. Add the water and syrup, mix the mixture- you may find that a lot of the syrup and water will remain separate from the mixture, this is OK.
5. Add the flour to the ginger.
6. Sieve the flour and ginger into the mixture, adding a little bit at a time and stirring it with a spoon, do not beat the mixture, this will make the texture harder.
7. The mixture s now ready to put on baking trays. Place walnut sided amounts on the baking tray, bearing in mind they will double in size as they cook.
8. Put the biscuits in the oven1 and check on them after about 10 minutes, and return them to the oven for about another five minutes, or until they are golden brown.
9. Leave the biscuits to cool on the trays for a minute, before transferring them to cool on racks. If you try to make the transfer too early the biscuits will start to break up.
10. Eat! They taste real good when warm!

As a variation, try using a different spice in place of the ginger, for example, allspice or cinnamon.
