View Full Version : What is the veggie substitute for a "meat & potatoes" meal?

A lot of my family's meals consist of a starch (potato/rice), vegetable (carrots/peas/green beans, etc.) and a protein (beef/chicken/fish)
If you want a veggie version of the same type of meal, what can you use in place of the meat?

Gardenburger riblets are a good substitute in that kind of meal (in my opinion)

I tried making a fake meatloaf once and it didn't turn out pretty. Just pretty nasty.
I use fake meat for meatballs and sloppy joes, but that's it so far. Maybe something ready-made will be nice, but I've never eaten anything like that plain as a 'meat' dish.
I just fill that space up with more vegetables. or pasta.

Yummy, I like dipping them in mashed potatoes, delicious. There's also chicken pattys that are veg, they're good. Especially if you're new to veg*ism, those are really simple solutions to add a little extra oomph to veggies, other than learning how to prep tofu, etc... which takes a little more practice than microwaving.

I've got a seitan pot roast going in the slow cooker right now with potatoes, carrots, parsnips, brussels sprouts, pearl onions, and crimini mushrooms. I make wheatloaf sometimes, or chickpea cutlets, or veggie burgers.

It smells awesome! I didn't realize it needed EIGHT hours in there though, and we're on hour 5... and it isn't cooked... but I only made a half recipe, so I didn't think it actually did need 8 hrs all things considered. Hmph. Fortunately I'm not hungry yet.
ETA: I put pics in the food porn thread in the food forum. It was yummy.

Amy's makes a frozen meatloaf and mashed potatoes meal, if you want something quick. The others' suggestions are good too.

I'm not a fan of the prepared fake meats - esp. not the ones that are junk food. A meat-n-potatoes meal for me would replace the meat (keep the potatoes and veg of course) with as tempeh or seitan dish. Tonight: "Garden Vegetable Tempeh" with rice sweet corn and chickpea.

Dang it! I missed dinner. How was it?
My meat and potatoes meal in a hurry is usually made of Morning Star Chick'n strips ,mashed potatoes, and veggie of choice. The Chick'n strips fry well if coated with a little flour mixed with about 2 tablespoons of cornstarch. Fry them in skillet with a little oil just like real chicken, but watch them carefully because they do cook quickly. The little brown flecks left in the oil after you remove the strips make a nice gravy. Boca crumbles mixed with chopped onion and cooked just till the onion is tender tastes nice with cooked cubed potatoes and a little salt and pepper. Just about any vegetable can be added to the mix. I love it with shredded cooked cabbage and carrots.

I'd say that you can't really replace, one for one, the omni meat and potatos meal. You eat differently as a vegetarian, not the same stuff as an omni. The quorn and so on are usually in smaller amounts-- they are pretty expensive as far as I am concerned.

Do you have recipes for any of those yummy suggestions. Although I've been making more rice & beans dishes, I am looking for something where the foods aren't all combined into a 1 dish meal.

Mock meats, shiitake mushrooms... Tofu and beans are a great source of protein!

Aw :( That sucks. *tea and toast* I should figure out a way to make my own seitan quick-mix and mail it to you... but it probably has more to do with the cooking process than anything. Get better so you can come to the Pre-Thanksgiving Potluck! bp and I are making the ultimate all-day-in-the-oven seitan turkeys. They're awesome.

Thanks :) You know I realized after I made the PB pasta and ate it and then posted it on my blog that I forgot to add the tofu! The recipe doesn't call for it, but Sunergia Foods makes an AWESOME peanut ginger "More than Tofu" that is really delicious in that dish! (not that it isn't delicious without, and it's so fast and easy too!) We're digging the kitten too :)
Not a stupid question. You can absolutely grill veggie burgers! They don't take very long to cook though, so you have to keep an eye on them. A little oil on the burgers doesn't hurt either. If you're sharing a grill with meat, you can also grill them on a bit of foil to keep meat juice off of them, if that's the sort of thing that grosses you out. I find I like the veggie burgers that aren't trying to be meat more than the ones that are -- I love Amy's California burger, and Sunshine burgers. The Morningstar/Boca garden veggie ones are pretty good too... but I think they at least used to contain egg whites, so I try to avoid them.

The BBQ riblets (I LOVE them!) are a good idea if you want something quick. If you're not pressed for time, try seitan or veat. Both are really versatile as meat substitutes and do well in stews or casseroles. I made an Osso Bucco from the veat last night and it was delicious.
Tempeh is great too. However, if you plan on cutting it into cubes to saute for a recipe, be sure to steam the tempeh first for about 20 minutes, otherwise the texture will be heavy. Also, keep the tempeh cubes fairly small (about 1/2-inch squares). A little goes a long way.
