Butternut Squash and Quinoa Pilaf

This recipe is suitable for a: vegetarian/vegan diet
Preparation Time: 20 minutes
Serves: 2
Ingredients:

2 cups Quinoa
1 small Butternut Squash
2 cups Kale
2 cups cooked Pinto Beans
1 small Red Onion
1 Vegetarian Stock Cube
1-2 tsp Dried Rosemary
Instructions:

Chop the squash into cubes, dice the onion, and chop the kale into bite-sized pieces.
On a medium heat, fry the onion and rosemary, and add the squash and kale after about two minutes.
Pour on enough water to cover, and add the stock cube.
Bring to the boil, and then cover and simmer.
Cook the quinoa.
When the Quinoa is done (about 10 mins), add the squash mixture to the quinoa and mix.

You might want more than one stock cube for this - I tend to like things less salty than other people.
