This is our first year being vegetarian, and my inlaws who are coming are vegan..so our Thanksgiving will be vegan.

We are having:
cranberry soup with frizzled leeks
buttercup squash stuffed with wild grains
vegan stuffing
vegan gravy
whipped yams
green beans with pearl onions
raw mango pie
deep dish minced apple crisp

I got the recipes from an online source that I can no longer remember. BUT I especially like the idea of stuffing a squash. It will be satisfying in the sense that it will go great with the other items and it can also be "carved" like a turkey.

I am no real help since this is my first one, but I HAVE thought long and hard about it.

Thanksgiving is my favorite holiday! I love celebrating how blessed we are with my family and friends.

might want to give a look through this link http://www.veggieboards.com/boards/search.php?searchid=3121571 there seem to be a lot of threads there that might be useful - recipes and ideas, etc.

I don't consider it thanksgiving unless there is green bean casserole, which happens to be extremely easy to make vegan. I'll make roast veggies too. I can't even believe I responded, it's WAY too early to be thinking about thanksgiving!!

am I the only one who can't stand green bean casserole? It's ruining perfectly good grean beans.

i don't care for the casserole, either.

what i always look forward to is a good stuffing/dressing. i still haven't figured out what my favorite kind is, though.

I have to put in another thumbs down on the casserole.

But I agree, its way to early to start thinking about this.

I like green bean casserole!!

My favorite things for Thanksgiving are stuffing/dressing, like Jenna said, and also candied sweet potatoes and lots of roasted veggies...anything other than that I can live without. But last year I made the turkey seitan by BGC in the link *Ahimsa* posted and it was great! :)

:dizzy: Thanksgiving?!

I really really like squash casserole. This will be my first holiday season being almost vegan. I'm a bit anxious because I'm going to see my family in Ohio and they're wonderfully accommodating, but my cousin is getting married and it's usually her mom that does all the cooking. Mom of the bride is usually a very busy lady, so I feel like it's be throwing (another?) wrench in the gears.

I always make cornbread stuffing... Passed down from my mommy. it's not Thanksgiving without it. :

Then green bean casserole, which isn't hard to make vegan.
homemade cranberry sauce (with orange juice, brown sugar, allspice.. mm)
mashed potatoes
nutritional yeast gravy
Some kind of stuffed mushroom (I usually make one with panko, but last year I came up with an amazing wild rice stuffed mushroom.. mm )
collard greens
fresh rolls
tofurkey

SO awesome

This is a tentative meal plan, additions and/or subtractions are to be expected, 'cause I change my mind lots. The neat thing is, all veggies and some fruit will be homegrown!

Creamy sweet corn soup
Salad with toasted walnuts and dried cranberries. (I need to think about the dressing yet.)
Pumpkin-blueberry muffins
Homemade chunky applesauce
Roasted tiny potatoes (olive oil drizzled over with real salt and freshly ground pepper) OR a combination of roasted root veggies.
Probably a brown/wild rice stuffing or other type of stuffing or baked beans
Brussels sprouts with some kind of glaze-type sauce.

After dinner wine, possibly apple or raspberry.

I think I need another dessert, maybe gingerbread to go with the applesauce.

Ohhh Thanksgiving! I can't wait to try out some of those recipes in that link, Ahimsa. Most of them sound quite yummy. It will be my 1st veg Thanksgiving and our 1st since we bought our house, so I am doubly excited. I get to be the hostess this time! yay! Question for anyone who can answer...is the tofurky really good? I've never tried it. I'm just trying to think of something that my omni guests might like, and I refuse to have real turkey on my table.

What would you recommend for a "main dish" I can bring to my carnivorous family's holiday dinner that would be a good side dish for them and a good main dish for us? Not Un-Turkey--that is too obviously "vegetarian" for these folks.

Last year, my husband and I got in a fight about Tofurkey and whether or not I would be "offending" people by bringing it. Like as if I were saying "screw you, your food's not good enough for me." I think he worries too much. :p

Mine would so say something like that, too. Wait, I mean my boyfriend, not my husband because I don't have one of those.

I think it's good manners to bring something to share that you enjoy when you're the person with dietary restrictions. If a person on another kind of restrictive diet, say, an Orthodox Jew, was invited to a meal and showed up empty-handed, the host may feel stressed not knowing what this guest may find acceptable to eat. But, if the guest brings something to share, not only is the guest saying "I will eat this" but also "I want to share".

It's also not too early to be thinking about Thanksgiving. It's what, two months away? Now is when we have to test out our recipes and see if they need any tweaking!

I tried Tofurky last year and it was good. With that I will make:
mashed potato's
stuffing/gravy
green beans
dinner rolls
blueberry cobbler
and some appetizers.

Some dishes I've brought to omni Thanksgivings that were VERY well recieved include:
--Creamy Scalloped Potatoes (very filling! No main dish needed for us vegans by the time you have rice, stuffing, yams, etc...)
--Wild Rice with Pecans, Celery, Shallots, and a blend of Wild Mushrooms
--Wild Rice with Hazlenuts, Dried Apricots and Dried Cranberries
--Green Chile-"Cheese" Rice Casserole
--Roasted Brussel Sprouts and Pearl Onions
--Some kind of stuffing/dressing with lots of celery, mushrooms, onions
--Stuffed (or twice-baked) Potatoes
--Stuffed Portabellos
--Scalloped Corn Casserole

All of the above are easily found on Google, PPK or my blog I think.

Karen, I love this time of year as well! I already have people who have agreed to partake of my vegan Thanksgiving. :bobo:

As for Autumn/Halloween/etc., I just love all the fairs and festivals that come along during this time of year.
