You cook potatoes and then you mash them.

Use unsweetened soy milk if you've got it, vegetable broth works too but is less creamy, and then add Earth Balance or other vegan margarine, season as you normally would (salt, pepper, garlic, onion, whatever).

you could use a little bit of the cooking water to make it softer and creamier, if your potatoes are quite floury. you could put some nice herbs in there too if you fancied, or a bit of crushed garlic that'd been lightly fried in a smidge of olive oil, etc. you don't need milk or butter or their vegan versions if you don't have them, just potatoes, mashed.

I use potatoes, silk creamer and nutritional yeast! Sometimes I add EB if I want them to really taste special, but mostly I try to eliminate the extra calories and the nutritional yeast gives them a nice flavor so I don't really miss the EB.

It's easy and there's a plenty of ways to do it!

Here's what I usually make... I boil the potatos, then put them in a Kitchenaid mixer (of course you can do it by hand, but the mixer is less work and the consistency is nice) with:
-olive oil (if you like, cook several mashed cloves of garlic in the oil, then add both)
-some soymilk
-a little vegenaise
-salt and pepper

Okay my favourite...

Boil potatoes...
Drain water...
Add canola or vegetable oil and salt to you liking and mash away..

I find this the tastiest way....

I really don't think vegan mashed potatoes would be complete without tofutti cream cheese to smooth them out :)

I mash them with EB and unsweetened soymilk. If I'm feeling extra wild, I'll put a splash of soy creamer in, too. :shifty:

Also, it's really nice to mash other things in, too. I started with mashing in some carrots that I boiled with the potatoes and some fresh chopped spinach (some soy yogo is good here, too). Recently, I've been frying some leek or onion, zucchini and kale in a separate pan and mashing that in with the potatoes. :lick:

I also never peel my potatoes. Unless I'm making vichyssoise. Mmmmm.... so good with a whackload of fresh herbs....

Mmmm... mashed with fried onions, saurkraut and tofutti sour cream. Made these for my dad and he like to have eaten the whole pot!

I like to make a big pan of roasted veggies (like omnis make with a pot roast) then mash 'em all up together with spices, nutritional yeast, umeboshi vinegar/gomasio, lemon juice and coconut oil or Earth Balance.

cauliflower is reeeaaaallly nice mashed into in potatoes- broccolli too, and of course parsnips.

I know! I need to start buying cauliflower. I like it, but for some reason I never buy it. I saw a recipe the other day for cauliflower/millet mash (for a lower GI rating than patates) that had garlic, dijon and parsley in it. Sounds so good.

i wish you could buy smaller cauliflowers. i get a bit overwhelmed knowing that somehow or another, i have to eat a whole one on my own :lol: frozen florets aren't great.

Didn't read the responses, but the way I make them is (after boiling the potatoes) I use plain soy milk, vegan margarine, then I just add pepper & garlic. Nothing fancy, but everyone likes them. I often add onions and/or corn. So simple & it's stuff everyone always has around the house. If that's too plain, add more spices and other veggies or anything else that sounds good.

That's not as odd as this though:

There's actually a recipe floating around that calls for *vanilla* soymilk!!!

Ok, point of clarification: If you use a mixer to mash them (and milk/soymilk) you're making whipped potatoes, not mashed. Mashed are mashed by hand.

I make mine pretty basic, savory and straight-forward. Cut up the potatoes (leave the peels on), boil until soft, drain. Mash with a masher with EB or Smart Balance Light, garlic, salt & pepper and parsley.

They stay like real potatoes that way and not some starchy imitation of cool whip or ice cream. Potatoes that are too smooth are actually hard for me to swallow.

i can see oil being ok. its almost the same as margarine but less watery, and margarine melts anyway. a nice nutty oil could be really nice. hmmm.
