Pineapple Cherry Dump Cake
Category: Desserts - Cakes

This recipe is suitable for a: vegetarian/vegan diet


Preparation Time: 50-60 minutes
Serves: 6to8


Ingredients:

1 can (20 oz) unsweetened crushed pineapple (DO NOT DRAIN)
1 can cherry pie filling
1 box yellow cake mix
1/2 cup Smart Balance margarine or vegan margarine of your choice
1 cup chopped pecans
1 cup shredded coconut (optional)


Instructions:

Preheat oven to 350 degrees.
Lightly spray a 9x13 inch baking pan with non stick spray and dust with one tablespoon of flour.
Melt margarine and set aside.
Spread crushed, undrained pineapple evenly onto bottom of prepared pan.
Pour cherry pie filling over pineapple.
Sprinkle dry cake mix evenly over fruit.
Drizzle with melted margarine.
Sprinkle pecans/coconut over all.
Bake 45 minutes or until warm and bubbly.
Cool slightly before serving.

I first discovered this recipe in a cookbook created by some adorable church ladies living in Rosebud, Texas, population 1,000.
It's nice and sweet, but not too much so.
If you want a total blowout,serve it with a scoop of vanilla Rice Dream!

My mom used to make this for every potluck function and people went nuts for it. I haven't had this in years.

I am getting misty. Thank you for posting this. Gave me a warm fuzzy feeling.

Yay! I love Dump Cake. My father used to make it in a dutch oven when camping. Now I make it in the oven :) BF+family love it. Even his grandpa!
Yumm. I don't put nuts or coconut in it, though. Maybe next time

edit: I don't melt the butter first, either. If you just put it in chunks on top, it melts on its own. You have to make sure you do it evenly and that you don't put too much cause it might melt-over

Type 2 diabetes... do not want.

Okay- kidding aside, this sounds like something I'd go for, but I might want to halve the recipe if I'm not going to have anyone around to help me eat it. It doesn't sound like something which would freeze well.

You really don't stir the cake mix and fruit together? I suppose it comes out like a sort of upside-down cake then...

I would say more cobbleresque, and no stirring at all. You probably will have to make it when you have a group of people around who like sweets or a neighbor or someone to share it with. I have a young bachelor next door I've sort of adopted and he gets all my extras.

But, he is a very nice ,well mannered young man. I'll get his number for ya!

i'd LOVE to get into trouble with a nice well mannered young man next door!!:D you go bake your cake, but in the meantime can i have the address of the house next door?!:naughty:
