Amazing chocolate oatmeal raisin cookies

This recipe is suitable for a: vegetarian/vegan diet


Preparation Time: 10 minutes
Serves: 20


Ingredients:

1 cup flour
3/4 cup rolled oats
1/2 sugar
1 tsp baking powder
1 tsp cinnamon
1/4 tsp ginger
1/2 tsp nutmeg
1/4 cup Earth Balance
1/4 cup peanut butter
1 medium/large banana, well mashed
1/2 tsp vanilla extract
1/2 cup raisins
1/4 cup vegan chocolate chips


Instructions:

Preheat the oven to 350 degrees fahrenheit. Stir the flours, oats, sugar, baking powder, and spices together in a large bowl. Gradually add the margarine (you can soften this a bit to make it easier to stir), peanut butter, banana, vanilla, raisins and chocolate chips. Mix well.

Line a cookie sheet with wax paper (or spray with cooking spray), and spoon out rounded spoonfuls of the dough. Press down one them with your fingers to flatten slightly.

Bake for 10-12 minutes and let cool before moving them to a cooling rack. Makes anywhere from 12 to 20 cookies, depending on how big you like them.

I am brand new to vegan baking (as in this is my first time) and I just made these and they are some of the best cookies I've had in long time!

The only thing I changed was I added about an 1/8 cup of light plain soymilk to the batter. I dunno if that really changed much, my batter just seemed a tad dry. But, great nontheless.

Oh and I love how the batter alone can be eaten safely. very nice.

Whoa, these are awesome!!!! I made the following subs/changes

-3/4 C white flour, 1/4 C whole wheat flour
-almond butter instead of peanut butter
-for the 1/2 C sugar, I used 1/4 C sugar, 3 T agave, 1 T blackstrap molasses
-instead of raisins and chocolate chips, I added in dried cranberries, cashews, and apart of a chopped up chocolate bar

AWESOME.

I want to make these, but I don't want the peanutbutter flavor. Can I leave out the peanutbutter or is it necessary for the texture? Do I need to replace it with something?

I made these exactly as says in the recipe and ohmygosh, awesome. Definitely one to go in my collection.
