Cherry Pie (No Bake)

This recipe is suitable for a: vegetarian/vegan diet


Preparation Time: 20 minutes
Serves: 8


Ingredients:

3c pitted cherries
3 to 4T cornstarch
1/2 raw sugar or sweetner of choice

1 1/2 c sliced almonds crushed fine in a coffee grinder (1/2c at a time)
1/2c chopped walnuts crushed course in a coffee grinder
1/2c raw sugar
1/4c margarine


Instructions:

Pit cherries in the pan to keep the juices. Add cornstarch and sugar. Cook over medium heat until thick stirring constantly. Set aside.

Throw nuts, sugar, and margarine in a non-stick skillet and stir until butter is melted and nuts start to toast about 3-4 minutes. Put nuts into pie pan and press down w/ a spoon.

Top with cherries.


Additional comments:

Because this has no top is should be eaten within 2-3 days max as the corn starch will form a skin in the air (like pudding does). I think this would also work raw with just ripe cherries & nuts.

sounds lovely! :hungry:

cherries in kirsh work well if you reduce/thicken the kirsch with cornflour also.. make a lovely syrup and has a kick to it (also good over winter when cherries aren't in season).
