Hi. I just found that there's a local seitan producer called "Upton's Naturals" in Skokie (I think). I bought some of their product at Whole Foods (South Loop @ Canal) once. I have to say, I think it's pretty good stuff. Maybe I'll cross-post this to product reviews. I got the Italian Sausage-style Seitan, and it was nicely spiced, IMHO. I don't think they're distributed out of Chicago, but hopefully they'll become more widely distributed.
