Lemon Glazed Carrots w/ Avocado

This recipe is suitable for a: vegetarian/vegan/raw diet
Preparation Time: 5 minutes
Serves: 2
Ingredients:

10oz match stick carrots (about 2-3 cups)
2 tbl extra virgin olive oil
3 tbl fresh lemon juice
1/2 tsp minced garlic
sea salt
cracked pepper
1 or 2 avocados
Instructions:

Put carrots in a bowl
Mix oil, juice and garlic, stir well
Toss with carrots and add salt & pepper to taste.
Serve with avocado slices
