My apologies if a similar thread is already in existence.

I find the 30 day vegan challenge too intimidating for me right now but I still try to incorporate vegan meals into my day. Sometimes I eat 100% vegan on a day, or sometimes I'll be really close but mess up one silly thing. :) Or sometimes I'll uhh not do very well at all :worried:

I thought it might be nice to have a thread like this as support for those of us attempting to eat vegan more often. No pressure to be perfect, but we can still post any vegan items we did manage to eat and feel good about those steps we take.

So I'll start. Today I ate vegan . . . soup with veggies and beans in it, and some sort of potato mixture. I got it from a "pay what you can" place at my university campus that is run by volunteers and always serves 100% vegan food. I usually buy a cheese pizza if I forget my lunch at home, but today I tried this place out instead and was able to feel good about choosing something animal friendly!

How about everyone else?

I had chickpea salad, on garlic bread, 2 oranges, a grapefruit, a apple, a slice of bread with vegan butter, a bowl of mesa sunrise cereal with silk soymilk, and bamboo, water chestnuts, bean sprouts, broccoli and fresh garlic kinda stir fry style. Oh this is not the order I ate them in just the order I remember them in

Fruit and fiber cereal w/almond milk
Yummy salad with field greens, black beans and chickpeas
Hearty veggie soup with red lentils
Banana
Stir fried seitan w/broccoli and brown rice
Tea

Oh this is not the order I ate them in just the order I remember them in

How do you make this chickpea salad? Your whole day sounds very tasty indeed.

Spelt english muffin, toasted, with a bit of Vegenaise, smooshed avocado and alfalfa sprouts. Totally weird breakfast I know, but I'm hooked on this right now. Had it for dinner last night too.
Lunch will be grilled italian tofu (SO good!), a bit of rice and a big honkin' bunch of mixed vegetables.

How do you make this chickpea salad? Your whole day sounds very tasty indeed.

I use 1 can of chickpeas rinsed very well and either mashed or chopped up in food processor, then I add some vegenase (I can't spell sorry) and pickle relish, onions, and chopped up red yellow and orange peppers and add horseradish then I stir it like tuna and eat it. I don't have measurements just kinda to your liking of the ingredients.

That's a genious idea. I am so trying some Monday when I get home. I didn't even think when you said it it would be like tuna salad, I'm that much more excited. Thanks for the insider info :)

I am just happy someone is interested in what I am eating and thinks it will be good, I love them they are also good in wraps and on crackers with spicy rice cheese.

I have to make you all jealous of my lunch. I got it at the natural market around the corner from my work.

Spinach Artichoke Macro Vegan Noodle:
Spinach jerusalem artichoke noodle, carrot, onion, parsley, shiitake, bamboo, tofu, scallion, sesame oil.

So freakin good.

And I had an endangered species dark chocolate bar with blueberries in it.

I'm very well pleased. And stuffed. I need a nap :)

yesterday my boyfriend and i went to this awesome pizza place downtown,
i had a slice of their vegan pizza- it had broccoli, olives, onions, tomatoes and cucumber.

I ate alot today... *feeling bloated*

I had cream of wheat made with almond milk

Shredded wheat cereal with banana and almond milk

Hummus and pita

Vegan indian food (cauliflower, potatoes, okra... mmmmm)

Vanilla toffuti cutie (double yum!)

and my mom bought a huge box (costco) of Lara bars.... i had 2 today! so dangerous!

Cucumber? Interesting. I don't know if I'd like that. Was the cucumber all you could taste?

Maybe someday instead of zucchini I'll put cucumber and see what it is like.

today's been all vegan so far, just salad (a plate of 3 different kinds) and a roll. With a little effort I should be able to keep it a vegan day. :nana:

Breakfast: Fresh Juice from my juicer (blueberries, apples, carrots, and spinach)
Lunch: Sweet and Sour Tofu over brown rice
Snack: Some dark chocolate
Dinner: Cereal with almond milk and a cinnamon raisin rice flour roll

Bean, rice, tomato, and green salsa burrito

Salad of spinach, mixed greens, shredded beets, tempeh bacon, chickpeas and a dressing of lemon juice and olive oil

Sourdough bread with Earth Balance and nutritional yeast

XXX Vitamin Water

So very much water

Let's see how good my memory is:

MultiGrain Squares (Organic "Shreddies"-type cereal) with rice milk
2 packages of instant organic oatmeal - apple cinnamon
Spaghetti with tomato & vegetable sauce, & nutritional yeast
Sauteed vegetables, rice, celebration roast (seitan)
1 Italian plum, just to try (I bought a bunch today, never had them before - they're good!)

*goes off in search of a bedtime snack*

So far this is what I've had... :D


Homemade tofu scramble (tofu, organic zucchini, organic potato, organic spinach)

1 slice of whole grain rustic Italian bread

several chunks of juicy, organic cantaloupe


= YUM!

Later, my non-vegan husband and I will be making a vegan spinach-artichoke dip with homemade whole wheat pita chips!!!

= MORE YUM!

It's nice to see so much animal free foods! I eat vegan all the time but I'll still post because it might give people meal ideas

Strawberry crisp cereal with orange juice poured all over it

1 peach

Soya mince bolognese (made with tomatoes, mushrooms, celery, carrots, stock and mince) with wholewheat pasta

1 Curried Chick'n sandwich on brown bread with a small bowl of kettle chips

For pudding I think I'm going to make a ice creamy fruity delight with toffuti ice cream, bananas, strawberries, mango and some chocolate syrup.

I've also had a glass of apple juice and lots of water to drink

Here's what I've eaten so far today:

B: oatmeal with vanilla almond milk, flax seed and banana slices
L: enchilada pie made with corn tortillas, fat-free refried beans, salsa, corn and spinach and I also had some cantaloupe chunks

I plan on having some raw trail mix for a snack (it's made of raw nuts and golden raisins) and then for dinner, I'm either going to make potato pea curry with brown rice and some veggies or chickpea cutlets with onion gravy, roasted potatoes and a salad. Decisions, decisions...

Breakfast: Big bowl of multigrain squares with rice milk
Lunch: Leftover veggie stir fry with rice :lick:
Snack: 3 Italian prune plums
Dinner: 2 baked potatoes, 3 slices celebration field roast, gravy (too lazy to cook another veg for dinner and no fiancee around to kick me in the butt to do it :lol:), half an oatmeal chocolate chip cookie
Will have a snack later, probably some strawberries
