So, I'm going to the store to get stuff to do my taxes (thanks poster from looking forward to thread), and get stuff to make dinner.
I've been in somewhat of a rut lately, not having cravings for anything, and when I think of what I want its the same thing I had two days ago. ARGH!
So I wanted to make a thread for future ideas.
If you post you should add pics too. I'll do the same...if I can't think of anything while I'm at the store I may just stay with a burger like I had last night :cry:
--I've decided on vegetable curry with roasted potatoes and sautéed spinach, possibly over rice. I'll post pics later

the whisky's a joke, but hey I did have it.
The food by the way is roasted potatoes, and then vegetables in a coconut milk curry sauce ;D

i LOVE chili and make it by the pot load. Even my omni Dh loves the stuff. i don't have a photo but I'd be more than happy to post a recipe :) That's what I'm making tonight, along with some jalapeno cornbread, yummy!

Last night I was going to have a vegan burger and fries, but I didn't have any buns...so I just had to have french fries, since it was so late. So I've decided that I'm going to have them *tonight*.
I'll post up a picture of the burger a little later

The link to submit a new recipe wasn't working, so hopefully i'm allowed to post it here. It makes a lot of chili, probably atleast 8 cups approx.
1 package chilli seasoning mix
1 large onion
1.5 cups sliced mushrooms
1/2 cups sliced leeks
1/2 cup chopped celery
1 cup diced peppers (i love red peppers, but whatever you prefer)
Fry those up with a little olive oil, then add in a large can of whole tomatoes (juice and all)
Add 1 can of brown beans
1 can chick peas (or dried/soaked equivalent)
either 1 can kidney beans, or black beans....or any bean of choice :) (or again dried/soaked equivalent)
1 package of Yves ground round (or whatever brand of 'ground beef alternative)
Let it simmer for about 20 minutes and it's done :) It's so tasty and filling. I eat it for lunch leftovers and it's so tasty.
I don't have the cornbread recipe handy, just put it away, but i'll find it and post it later. It's from the book "Clueless Vegetarian".

When I was a kid, my parents always made cornbread with this thing called cornkits (package, where you add some ingredient, similar to cake mix). I prefer non-sweet cornbread like this, and have yet to find a suitable "comfort food" replacement. We always cooked it in a cast iron skillet, and even if I cook it now in a cast iron skillet it doesn't cook super crisp on the bottom and fluffy on the top like the dead animal version from my youth. Anyone purposefully or accidentally been able to reproduce this?

Here's an experimental recipe I'm going to try, maybe tomorrow! I don't know the proportions at all, hence it is an experiment. Nonetheless:
Enough cooked pasta and tomato sauce to cover the bottom of a large casserole pan about 1.5 inches high.
Enough eggplant and yellow squash slices lightly coated, olive oil, salt and pepper, to cover another 1/2-1 inch or so high in the pan.
I package of tetra-pak tofu and a can of butter beans pureed with just a bit of olive oil, some added salt, with say a clove of garlic in the mix to pour all over the top of it.
Then I'm going to throw it in the oven at around 350 for 30-45 minutes, or until it looks done.
It's like a vegan eggplant parmesean spaghetti casserole, essentially. The idea came to me last night and it seemed too good to pass up trying.
I'm a little hungry now.

I just made vegan corndog muffins, and they're incredible.
Recipe here:
1/3 cup rapeseed oil
1 1/3 cup plain soymilk
Stir above together. In another bowl whisk together:
1 cup whole wheat flour
1 cup cornmeal
1 tbsp baking powder
1 tsp. salt
Mix wet and dry together and pour into muffin tins, inserting pieces of vegan sausage into each. Cook for 25 mins at 175 celsius.

So good.

*sob* i dont think I can eat dinner.
Its a sunday so all the shops are closed and I let my cupboards get veeerrry bare. I think I'm going to end up eating rice noodles with ketchup on =(

What type of vegan burger is that?
I believe the are called Garden burgers. They're gluten free, soy free and vegan :up:
I didn't feel very good all day today, my stomach was bothering, so I didn't eat anything. I had my mother bring me two potatoes, and an onion from the whole foods on her way home from work (WF is where I get the burgers too), I had vegan bouillon and garlic here.
Potato soup always makes me feel better. I love potato soup :love:, my mother always made potato/cheese soup when we were sick as kids, so I'm sure that's where this come from

I didn't take any pictures of the soup since it's not really an aesthetically pleasing dish.
More people should post pictures of the food they make :)

I made Butterbean Casserole again last night. If anyone has the 'So What Do You Eat?' cookbook then give it a try. It really is the perfect filling warming winter dish!

Tonight i am making coconut Veggie rice noodles! I've never tried it before but it looks really good! I'll have to let you all know how it is! Even my non vegan boyfriend is going to cook with me and try this dish!!

Moroccan stew: lentils, brown rice, onion, curry powder, coriander. Served in acorn squash halves w/ cinnamon. Really easy to make and super tasty.

Tonight was really simple. Sauteed some broccoli w/bok choy in a tiny bit of virgin coconut oil and red pepper flakes. Had it w quinoa mixed w/black beans onions and tomatoes.

been really busy last couple of days, so last night was canned (eww) rice and beans and tonight was canned (eww) soup.

last night i had a pita wrap thing with fake chicken strips-tomatoes-red/green peppers-carrots-broccolie-brown rice-mushrooms(seasoned with onion flakes-chili falkes-garlic salt-red pepper flakes when cooking)and then i put a tuscan bean spread on the pita before adding ingredients to pita and then topped the whole thing with salsa and vegan sour cream before wrapping. It was extemely filling.
