I stayed at St. Raphaels (http://www.straphaelguesthouse.co.uk/), which costs us about 32 quid pppn. It included (veggie upon request) breakfast, it was nicely located, not far away from the city centre, very nice accommodation inside, and most importantly, the owners were super-friendly and helpful. I warmly recommend them.
We had also checked out another veggie-friendly b&b in York, called York Alternative Bed and Breakfast (http://www.yorkalternativebandb.co.uk/), which looked really interesting, but didn't have any places, so we didn't stay and I can't offer any more info on it. It's slightly cheaper, too, at 26 quid pppn.
You'll find that York has quite a few nice b&bs, so you'll have plenty of choice.

When I came to York for the 1st time I stayed at Cornmill lodge (http://www.cornmillyork.co.uk/)http://www.cornmillyork.co.uk/.
It's a veggie/vegan B&B and about a 10-15min walk from the city centre.
I also think it's one of those places where if you are a member of VIVA (http://www.viva.org.uk/) or The Vegan Society (http://www.vegansociety.com/html/)
you also get a discount too. You will have to checkthat though as I stayed there about 4years ago.
Was a nice enough place to stay. It also has parking at teh back, bit of a squeeze though,so take a small car lol.
Let me know if you do come to York and my veggie and vegan friends and I will meet up with you and take you for some food, we've loads of vegan pubs and resturants in York.
We've been talking (for like a year) about going to York to check out the Viking stuff. :) The Cornmill looked pretty neat, but I think there was another veg. place too (that I can't seem to find now).
