Another vegan chocolate cake!
Category: Desserts - Cakes

Suitable for a: vegan diet


Ingredients:
------------------------------------------------------

6oz Self-Raising Flour
6oz Sugar
6oz Margerine
100mls Espresso Coffee (may need to add more if mixture is too dry)
2tbsps Baking Powder
3tbsps Cocoa


Instructions:
------------------------------------------------------

- grease and line 2 cake tins and preheat your oven to gas mark 5
- Add the margerine and sugar together in a mixing bowl.
- Beat together (use an electric mixer if you're lazy like me)
- Sieve in the flour, baking powder and cocoa and mix in (DON'T use an electric one now)
- Pour in coffee and mix again
- pour the mixture into the cake tins
- Bake for approximatly 20 mins
- Leave to cool and fill with butter icing (or vegan margerine icing :p) and cover in chocolate.

Keep checking it as it bakes, sometimes it that take less time and other it can take a lot longer. I don't know why :confused:

Yes one attempt was both of those but that was because I used cake tins that were too shallow and it rose too high over the sides. Every other time I've used this recipe it has gone fine, well except the time I didn't have enough flour so did half and half with cocoa, not a good idea :o
Anyway, it works fine when you make it with time, instead of an hour before you need to take it somewhere or when you don't have the right ingredients. :D
